Commercial Description:
Once again a beer appears on the CBC menu which firmly expresses your iconoclastic brewers’ commitment to fly in the face of tradition, and boldly mess up the mainstream. Cerise Cassée is a complex beer in both process and palate. It begins with a unique, 3-day long sour mash of 100% of the malted barley. This very tart wort is fermented along with 300 pounds of sour cherries by several strains of CBC beer yeast, then sent downstairs to the secret dungeon – er, barrel cellar, where it ages for one year in French oak wine barrels (Pinot Noir and Chardonnay). Here it undergoes yet another mysterious process as a final long, slow fermentation takes place with microflora such as Brettanomyces, Lactobacillus, and Pediococcus. Don’t let those things scare you, though, because these barrels and wild beasties of beer contribute a smoothness and significant complexity which could otherwise not be attained by “traditional” modern brewing methods. The resulting tart, amber-red ale, effervescent in its flute-shaped glass, combines aromas and flavors of sour cherries, malt, vanilla and oak tannin, and a finish that defies description in its funky-yet-balanced uniqueness. Please enjoy this beer while watching the dividing walls between tradition and innovation, between the common and the most challenging, even between beer and wine, crumble to dust as did the walls of Jericho under the breath of Joshua’s horn. hazy dark/reddish brown. Very lively beer with a dominating tart flavor and feel. Makes your mouth pucker right up. Sour cherries and lemon juice take you for a ride.

On draft at the brewpub. The color of this beer is dark - some dark brown and some dark red - and cloudy. This beer smelled of acid (subtly like sherry vinegar). There was a subtle fruitiness and a subtle note of sour cherries in there, too. The flavor follows the aroma: sour, sour, sour. There is some tart cherry in there, perhaps some sweet malts, but mostly sour, sour, and more sour. It is quite the pucker-maker. The finish was dry and sour. The mouthfeel was decently carbonated and strongly drying from the acidity. Overall, a decent beer, but a little too sour. They shot for a very sour beer, and almost hit a nice spot of refreshing and intense. Instead they hit the spot of intense but a little too much vinegar to be refreshing. It is still worth trying if you like sour beers - it was certainly unique and more drinkable than some other sour monsters I’ve had.

On tap. Pours a hazy red amber with minimal head. Excellent tart cherry aroma. Taste is woody, sour and acidic fruitiness with cherry sweetness. Excellent after dinner beer.

draft at brewpub..... pours a dark caramel amber brown with a thin ring of light brown head at the edges.... aroma of a strong sense of tartness along with a little bit of oak. some cherry aspects also work themselves into the equation..... flavors of of nice oak and tart cherry with some points taken awayh from being a little too carbonated. mouthfeel was a little too lively.

On tap at the brewpub. Interesting tangy balsam fir oil nose. Orange zest blends with classic funk and red fruit. Pours a heavily hazed burnt red, with a cloudy fringe in dirty orange. There’s quite a lot of carbonation fuming and a nice rim of white curling up the edges of the glass. Wow! That’s piquant! A very sharp acid. Uh-oh, here comes the acetobacter. A pleasent lactic acid washes through with a bite of the acetic. Lemon juice fights with some cherry sugars. A bit of blue cheese and mold. The vinegar climbs up into my nostrils. Finishes very clean. A bit biting. Classic in many sense of Rodenbach style renditions. Sharp. Light sweetness actually carries the alcohols a little longer than I might expect. The searing vinegar-like acidity kills this one for me. There’s no fruit nuance or body really allowed to show through. Otherwise, fun.

Visit to Boston and the Cambridge Brewing Company, the only brewhouse in Beantown to get an "essential" rating in RateBeer! Tried this first - it was super sour stuff with cherry and citrus flavors dominating. For me it was closer to wine or sugarless lemonade than ale. Maybe my palate needs a little more experience with the style.

8th Big Beers, Belgians, and Barleywines. Pours clear tawny with a small, frothy, light brown head, lasting with fair lacing. Aroma is average malt (hay, straw, bread), average hops (grass, citrus), average yeast (earth) with notes of cherry and cask. Medium bodied, sticky texture, soft carbonation, and a bitter finish. Average duration, light sweetness, moderate acidity and bitterness.

On tap at the 2007 GABF: Pours a slightly hazy copper with a thin ring of white head. Aroma of complex funky tartness and cherry oak with a touch of caramel sweetness. Body has some nice malty sweetness and balanced with good oaky tartness and cherry notes. Very complex, authentic and enjoyable.
