Commercial Description:
Once again a beer appears on the CBC menu which firmly expresses your iconoclastic brewers’ commitment to fly in the face of tradition, and boldly mess up the mainstream. Cerise Cassée is a complex beer in both process and palate. It begins with a unique, 3-day long sour mash of 100% of the malted barley. This very tart wort is fermented along with 300 pounds of sour cherries by several strains of CBC beer yeast, then sent downstairs to the secret dungeon – er, barrel cellar, where it ages for one year in French oak wine barrels (Pinot Noir and Chardonnay). Here it undergoes yet another mysterious process as a final long, slow fermentation takes place with microflora such as Brettanomyces, Lactobacillus, and Pediococcus. Don’t let those things scare you, though, because these barrels and wild beasties of beer contribute a smoothness and significant complexity which could otherwise not be attained by “traditional” modern brewing methods. The resulting tart, amber-red ale, effervescent in its flute-shaped glass, combines aromas and flavors of sour cherries, malt, vanilla and oak tannin, and a finish that defies description in its funky-yet-balanced uniqueness. Please enjoy this beer while watching the dividing walls between tradition and innovation, between the common and the most challenging, even between beer and wine, crumble to dust as did the walls of Jericho under the breath of Joshua’s horn. GABF 2007. Mostly cloudy, ruddy caramel colored pour with a healthy head of creamy beige. A thick aroma of sour apples, caramel, and cherry skins jumps out right away. Mildly acetic with hints of tannic oak. Medium light bodied, briskly carbonated mouthfeel. Crisply acidic up front, with a slighly acetic cidery dimension to it. The palate transitions nicely to some fruity suggestions of crab apple skins and cherry fruits before fading into a slow finish of dry oak and mild peppery spice. Tasty and complex, but would be better with a bit less of the vinegar character.

(Draught) Pours a cloudy amber body with a spare off-white ring of bubbles. Aroma of oak, cherry, and vanilla. Flavor has a funky sourness from multiple strains of microorganisms, earthy, oak barrel, wild berries, and cherries.

tap at NOTF ’07. Pours a red amber with a small white head. Nose is sour malt, cherry, wood. Flavor is slightly fruity with a dirty socks finish. For me, this is very different from when I had it at BCTC in July. Doesnt taste as clean or fresh as it did then. Still, a very nice sour.

GABF 2007: Poured a hazy brown color. Very nice tart cherry and woody aroma. Sour and acidic flavor. Good fruitiness. Some residual sweetness. Very tasty.

Off notes from 3/2007. Pours a clouded garnet/ruby with a nice tan head that falls. Nose is beautiful. Strong wood influence with cherry tones. You can tell this was made with care. Flavor is a mild wood with a stronger cherry profile. Feel has a thick bubble to it that hits the back of my mouth and leaves quickly. The liquid feel seems a bit thin. This reminds me oh so much of a lambic. Overall, very drinkable. It might have to be your cup of tea, but I dig it. If you like lambics, you will like this. After two 9 ounce beers and a burger, this was my dessert. As it got closer to the end, I wished there would have been more. I weep for you if you go in and this beer is not available.

On tap at BCTC ’07. Red/orange color with a small beige head that lasted quite a while. Aroma of tart cherries, sour milk, oak and vinegar. Many people might read that and say, Ewww! But the aroma was quite lovely. Tart cherry flavor with a metallic background that reminded me of the taste of blood. Quite acidic and sour. One of my favorite beers of the fest.

Draft. Brown-cider coloring. No head to speak of. Sour apple, tart, berry delivery in aroma and flavoring. Very pucker-mouth-sour acidity lingers on the tongue for a good minute beyond taste. A residual impact that long deserves respect and appreciation. Sampled @ BCTC 2007
