Commercial Description:
Once again a beer appears on the CBC menu which firmly expresses your iconoclastic brewers’ commitment to fly in the face of tradition, and boldly mess up the mainstream. Cerise Cassée is a complex beer in both process and palate. It begins with a unique, 3-day long sour mash of 100% of the malted barley. This very tart wort is fermented along with 300 pounds of sour cherries by several strains of CBC beer yeast, then sent downstairs to the secret dungeon – er, barrel cellar, where it ages for one year in French oak wine barrels (Pinot Noir and Chardonnay). Here it undergoes yet another mysterious process as a final long, slow fermentation takes place with microflora such as Brettanomyces, Lactobacillus, and Pediococcus. Don’t let those things scare you, though, because these barrels and wild beasties of beer contribute a smoothness and significant complexity which could otherwise not be attained by “traditional” modern brewing methods. The resulting tart, amber-red ale, effervescent in its flute-shaped glass, combines aromas and flavors of sour cherries, malt, vanilla and oak tannin, and a finish that defies description in its funky-yet-balanced uniqueness. Please enjoy this beer while watching the dividing walls between tradition and innovation, between the common and the most challenging, even between beer and wine, crumble to dust as did the walls of Jericho under the breath of Joshua’s horn. RERATE, GABF 08: Hazy brown. Lively carbonation. Rich fruit flavors of cherry pomegranate, cranberry and raspberry. Full, bold sourness. Ballsy tartness to boot. Great levels of catty bile, acid and vinegar. Dryish, gum-tingling finish. One of my favorites at this year’s GABF (2008) ... and probably last year’s as well.

(Draught) Sampled at the Belgium Comes To Cooperstown 2005 in Cooperstown, NY. Pours a cloudy brown-red headless body. Nose is a crazy funk mix-up of lovely cinnamon and cherries and tiger balm. Flavours include a funky strange clove, cinnamon and nutmeg. Astonishing stuff!

Poured a murky brownish red color with no head or lacing on the glass. Aroma of brett, hay, sweat, caramel malts, vanilla, and whisky. Taste of tart cherries, oak, vanilla, whisky, with a lengthy sour finish. This stole the show for me, and was tasted on top of the Ommegang hill.

GABF 2007. This was a tricky beast. Even over the course of the fest, in the same keg, the flavor changed quite a bit from day to day. I had it early on, and it was awesome. I had it later on, and it wasn’t as awesome (but still pretty good). This rating is for the first tasting. Smell: vanilla bean white oak barrel, cherry sour, and yeast. Almost Rodenbach-ish in its cherry awesomeness. Woody. Sourness is perfect, Granny Smith apple with yeast hitting in the back of the throat; the fruit is so round and fully developed, surrounded by toffee caramel sweetness. Dry-ish in the finish. Brown sugar notes in the middle, too. Oakey overtones add a nicely proportioned accent. Really, at its best, this a fabulous beer. If only it could be fabulous all the time.

Bottled. Almost clear and reddish brown in colour with almost no head. Quite well balanced with notes of berries, citrus,glue, light stable feel and apples.

Bottle at Club-tasting - Thanks Kasper. Clear red/brown - offwhite head. Berries, red berries, rubber, light balsamic, cherry, brown sugar, dryness, high dryness, tartness, wood, nutty, sourness, sourish, light glue, light barnyard, Lovely complexity. God damnet I love this beer.

In short: An intense Flemish Sour style ale with a little funky edge. Superb.
How: Re-rate. Tap at brewpub. 2007 vintage served at the pub summer 2009.
The look: Cloudy redish-brown body topped by a off-white ring of foam
In long: Nose is similar to a classic Belgian Flemish Sour (let’s Say Rodenbach Grand Cru) but with extra cherry skin. Taste is intense, this is a beer to drink slowly. Lots of oak, very tannic, sour red grapes and sour cherries, cherry skin. Very mouth-drying with a sensation of oak sucking everything from my mouth. A little funky. The beer menu was fantastic on that day, and this one was the Cerise Cassée on the sundae.

So there is a good story here. I was unsure whether I wanted to drive to this brewpb from my hotel room. You now, strange city, work tomorrow, have not had enough sleep lately. I went on the site and saw that CBC had there Flanders on, so I had to go out. Got lost but find my way there. Came in and asked for this unfortunately the keg needed replacing so I asked for the DIPA. After that U got this beer and then I asked for a growler but they would not sell it to me, so I had to settle for another glass. It was poured into a half tulip half flute glass, big head, dark, dark red body. Absolutely no clarity. Aroma is all Flanders, starts with slightly spoiled sour cherry, some present vinegar, a nice cookie dough maltiness peppered with cocoa. Its very acidic and spikey beer. Completely dries out my mouth, I need water after every sip. Tingles every part of my mouth. Just an excellent palate. A lightly vinegar aftertaste and I keep burping cherry juice. Recommended and do yourself an favor and order 2.
