PilsnerPeter (1477), Flushing, New York, USA Jul 7, 2008 Bottle 2007 opened during 4th of July weekend: Beautiful glowing deep orange color, hazy appearance with a creamy off white ring of head. Very nice color. Aroma has that standard Cantillon funk of sharp and aged cheese, lemon juice, acetic notes, and mild cask character.Crisp body. Not very sour, but it’s sharp and has a nice acidity. Funky notes of old cheese and horse blanket. Also has a mild vanilla hint in the background as it warms- (maybe from the Cognac barrel), which meshes well with the fruity acidity- making it reminiscent of sour lemon cake. Finish gives off some residual oak tannins and tartness. Well integrated, complex and unique. Another beauty by Cantillon.
BDR (1903), Roseville, Minnesota, USA Oct 7, 2008 A sour barnyard aroma with a vinous character amid the barnyard and yeast. Faint vinous character in both bottles I’ve had, but the cognac showed through much more in the second bottle. Incredibly sour and worthy of the Cantillon name. Bottle: Big apple and lemon sourness aroma with some faint oak and a touch of fruit. It pours a cloudy golden-orange with a small white ring for a head. The flavor starts with sour lemons and apple. There is some sweet apple and vanilla in the background and the finish is moderately oaky. Light bodied with mild carbonation. egajdzis (3021), Terrapin, Pennsylvania, USA Sep 27, 2008 Poured a hazy, dark golden color with a small ring of white bubbles around the edges, and light lacing on the glass. Aroma of brett, citrus fruits, light cognac, leather, oak, and green apple. Taste of green apples, red grapes, vanilla oak, cognac, brett, and a sour, wild yeast finish. Aroma is fairly alcoholic, some traditional cantillon funkiness, slight sweetness, sour apples, some grape, and earthiness. Flavor is not terribly sour. Some alcohol, grapiness, woodiness, slightly herbal and earthy, I’m not terribly familiar with cognac, so I can’t comment on that aspect, but overall a fairly good beer. hopdog (4647), Lansdale, Pennsylvania, USA Sep 27, 2008 750ml bottle shared courtesy of egadjzis. Poured a deeper and hazy golden color with a smalle sized head. Aromas of wood, some funkiness, floral, grapes, and some cognac in the background. Tastes of vanilla, wood, funky, floral, citrus, the same trace of cognac, and grapes. Nice sour and tart finish.
