Aged cheesy funk. The requisite barnyard notes. Very dusty and musty basement. Some wet dog. The deeper I dig, I think I can pick out some of the cognac. The acidity pierces the nostrils. Pours a still gold with virtually no appearance of carbonation. The flavor is wonderfully acidic and tart. Awesomely funky. Loads of sourness with some tart fruit and lots of wood. Rather full bodied for the style with an awesomely aggressive sour and tart finish.
Honestly... It really just smells like dill and tastes like hampster bedding. BlackForestCO (828), Fort Collins, Colorado, USA

Poured a clear peach-orange color with a thin white head that diminished to a thin layer. Aroma of tart fruit (orange, lemon, peach), funky yeast, some barnyard, a hint of cognac, and some oak. Tart, dry entry with some moderate fruit (peach skin, orange, lemon) that leads into a funky yeastiness with some barnyard character, tannins, and some drying oak. Soft carbonation with a great dry bite. Crosling (1856), Loveland, Colorado, USA
| 3.1 | Aroma | Appearance | Flavor | Palate | Overall | | 6/10 | 4/5 | 6/10 | 3/5 | 12/20 | Oct 18, 2008 Very light golden orange color with a small, white head. Aroma smells of traditional Cantillon lambic with a very, very light added hint of cognac. Flavor is aged, well blended lambic with just the slightest note of cognac. Lacking the softness I would prefer and mainly just harsh, oude gueuze. A bit off balance and with out cognac character. zebracakes (1216), Washington DC, USA

Pours gold with bubbles, thin white head. Aroma is sharp, tangy, and bitter. Flavor is woody, tangy, fruity, crisp and sour. We tasted this alongside Isabelle, and Isabelle is superior, in my opinion. Still, a great beer. djtimeless (179), Florida, USA

| 4.8 | Aroma | Appearance | Flavor | Palate | Overall | | 9/10 | 5/5 | 10/10 | 5/5 | 19/20 | Oct 7, 2008 A sour barnyard aroma with a vinous character amid the barnyard and yeast. Faint vinous character in both bottles I’ve had, but the cognac showed through much more in the second bottle. Incredibly sour and worthy of the Cantillon name. Bottle: Big apple and lemon sourness aroma with some faint oak and a touch of fruit. It pours a cloudy golden-orange with a small white ring for a head. The flavor starts with sour lemons and apple. There is some sweet apple and vanilla in the background and the finish is moderately oaky. Light bodied with mild carbonation. egajdzis (3636), Spring Mount, Pennsylvania, USA
