Acidic nose with notes of damp straw, wet leather, apple cider vinegar and that lovely, patented, Cantillon barnyard funk. Medium to full-bodied with mild carbonation. Mellowed by the cognac barrel, the acidity is restrained. Very nice bitterness; not flashy, just nice. Finishes tart, tangy and lightly bitter. Verey soft and fruity flavor with grapefruit, lemon sweet apples, pineapple and oak. Leather in the finish, with strong cognac notes. Lemony and grapefruity. Amazingly complexity. Pours a cloudy yellowish color, with a small soapy white head. Daft lacing. Tart as balls in the nose. Wild Belgian straw is how I’d describe these esters. Flavor is a bit more subdued however. The aroma consists of big, typical Cantillon funky sourness, sweet lemons and other forms of citrus blended in. The flavor actually was alot more mellow than the aroma lets on. Pretty subdued. It was certainly sour, but not cheek puckering sour like you usually get. The cognac Im sure has something to do with the subdued nature of this beer, which made it quite pleasant to drink.
