Commercial Description:
In March 2005, the brewery Cantillon had bought second hands barrels in the region of Cognac. For 15 years, the wood had been impregnate with cognac. Then for 2 years, our lambic has extracted all the flavors and aromas to make a unique gueuze. The name comes from the geographic location of the brewery.

[I tried this one at the open brewing day March 6th 2004, thanks to Jean van Roy and John White] The aroma is fantastic, sour from the wild fermentation yet sweet with notes of lemon and very well rounded. The color is orange and it has no head. The flavor is thin compared to the promising aroma, it is sour with notes of citrus and grapefruit.

(Bottle 75 cl) Slightly hazy, amber golden with a basically absent head. Sour - very sour - Brett aroma. The body is soft and a little watery - and completely flat. Lots of Brett sourness dominating this - and some oaky touches. Not much cognac though. 090507

75 cL bottle at Bier Circus. Pours almost golden orange, clear and with a little white head. Mild brett aroma, quite fruity and light. Dry. Flavour starts quite citric, light acidic touch and a dominant orange/citrus fruity flavour. Dry, light woody and mellow acidic finish. Continues with a nice lingering orange fruity flavour. Very smooth.

Bottled (from Jacob’s collection). Hazy pale orange. Up front Cantillon acidity mingles with strong cognac aroma. Sweeter than the average Cantillon, yet fresh and acidic. After the initial punch the cognac flavour subdues to a more balanced level. Interesting, and - as alwatys with Cantillon - very, very good.

Bottle. 75cl. [Tasting @ Ølbaren, Copenhagen]. Unclear orange color with a small, fizzy, fair lacing, mostly diminishing, off-white head. Aroma is sour - acidic, apricot - peach, wood. Flavor is light to moderate sweet, moderate acidic, bitter and sour with a average to long duration. Body is medium to light, texture is watery, carbonation is soft. (110308)

Bottle, 5% at GBBF08. Good citric flavour, some orange juice. Cloudy orange colour. Stable white head. Very nice citric flavour, not mouthpuckering, but really good. A well-balanced lambic.

Bottled. Hazy nut brown/amber colour with not much head at all. Aroma is sour wood, with very sour fruits as well as some slight barrel notes. Also quite barnwardish and earthy notes in the nose. Flavour is sourness from fruits and wood along with some notes od oak barrells. A really pleasant brew.

Bottle. Hazy orange coloured with a small white head. Light acidic aroma of fruits and wood with notes of brandy and brett. Light acidic flavour of fruits, apricots and wood with notes of brandy, white wine and brett. Tart finish.
