The color is very beautiful deep red and the head is huge, creamy, slightly pink and it leaves a thick lace. The aroma is quite sour, but not quite as sour as many Cantillion, and it doesn’t sting in the nose. It has notes of barnyard, horse blanket, damp basement and all the typical brett notes. The blue berries are not found, but berries, yes. The flavour has a dry sourness, and the same notes as in the aroma are found here too. Poured a purplish color with a small off-white head. The aroma is big with funk, yeast and fresh ripe blueberries. The flavor features a good blueberry character set in a spicy tart-sour backdrop. The mouthfeel is smooth and silky. The finish is long with lingering tart blueberries and a bit of brett. Overall: A simple yet complex concoction. Very nice. Note: Also tasted the 2005 vintage at a later tasting by Toncatcher. I found the 2005 to have lost most of its marvelous blueberry character--and was indeed overly sour. wetherel (1641), Encinitas, California, USA

Compared against Upland Blueberry lambic. Lots of funky horseblanket in the aroma. A lot less sour than the Upland, which is a good thing. Clear purple-red color. Some nice notes of blueberry in the aroma, and tiny particles floating in the beer. Dry, but an illusion of sweetness from the fruity characteristics. Tart like an under-ripe peach. Nice. On one side; tartness to the max, mellows out tho´, plenty of funk and a dirt/stable/must aroma from heaven. On the other hand; fruityness and rouded, yet subtle, geenish and firm; blueberries right from the garden. Sulphor and berry aroma, dry. Dry woody and berry fruity flavour. Very classic Cantillon sour sulphorish at first. Adds a solid blueberry smooth flavour. Gains some classic dry brett flavour towards the finish and makes me shiver. Ends with a dry woody and sourish/citric. Lovely.
