Aroma is fruity, sour, vinegar, wet wood and funky earth tones. Flavor is sour and fruity. Tons of earthy notes, some bursts of tart fruits, vinegar and lively carbonation. The first thing I notice about this beer is the absolutely striking appearance. Pours an absolutely gorgeous ruby pink with an amazingly frothy bright pink head. Aroma yields loads of Cantillon funk. Earthy minerals and gravel seem to override any essence of fruit. A big sniff yields just the smallest hint of tart, dried blueberry skin. Tart and acidic for sure. Earthy, funky, dirty and leathery despite all of the fruit. Cobwebby and slightly musty basement. Flavor actually shows the fruit more than the nose. A most excellent melange of fruit, barrel and sour yeast. Not nearly as bracing in it’s sourness as Fou Foune or the Lou Pepe’s. Shows quite a bit of balance. Earthy, leafy and funky yet retains some of the blueberry skin tannins. Wonderful in it’s simplicity. Lush and amazingly creamy texture. Pours a reddish dark pink, with frothy white head and tons of lacing. Nose is very tart, dry, some dark fruit as well. A: Pours a nice deep berry red with a fizzy head with a pink tinge. Little retention and no lace.
S: Nice funky sour aroma. The berries are there but they are of the sour sort.
T: Nice and acidic up front. The berries come out in the middle. They are in fact sour like early season strawberries with a blast of under ripe blueberries. Hints of citrus peek through along with the funky tartness found in all Cantillions.
M: Rather light to be honest, zippy carbonation.
D: Very good for the style. I usually don’t find Cantillion to be real drinkable this one is.

Insane funk in the aroma- lots of cheese character (gouda rind) and cobweb. The blueberry is not sweet, rather tannic and reminiscent of the skins. Not as citric as I expected. Very light and fluffy feel. Minerally upfront- quite fruity in the flavor. Way less tartness/sourness than I expected. Soft blueberry skins and mild lactic character are evident in the fluffy body. Light, fluffy, fruity and gentle. Not as wild nor sour as I expected it. Still it’s a great Lambic, but I want to try the older vintages now, which according to past ratings had less fruit presence and more lactic wildness. Il sapore è perfetto,ciliegie,limone che da acidità ricca di frutta. Perfettamente secco.Eccellente
