Unblended lambic aged 2 years in a white wine barrel from Nuits-Saint-Georges in Bourgogne.

A Mes rate: 75cl bottle at West during RBESG.
Thanks to Jacob for dipping into his amazing cellar ("I only have 8 bottles left of this...") and Tom for holding off opening this until Sim and I returned from Edinburgh. Cloudy and murky, usual inviting Cantillon looks. Lemon, peach, orange and grapefruit. A citric dream. So smooth intitally with plenty of the wine barrel mellowness showing and with a wonderful dry kick at the finish. Fanbloodytastic.

Bottle very graciously shared by Brad!!! Pours slightly hazy copper color with a momentary off white head. Aroma is musty ,murky, oaky, vineous. Flavor is oak, vinegar, vineous, hay, white raisin. Body is medium to light, mild carbonation, finished ultra dry, and mind numbingly refreshing! Absolutly unbelievable!!

25 oz bottle, via trade. Pours a hazy orangish body with a small fizzy white head. Zero carbonation. Large bubbles cling to the edge of the glass. Very funky nose with lots of hay and cellar cobwebs, fresh oak, and pixie stick sugariness. Very tart acetic vinegar flavor, classic Cantillon! Intensely puckering, very vinous, reminds me of chardonnay grapes. Mouthfeel is dry and crisp with a bone dry finish. Nice moderate fizzy carbonation keeps it feeling alive. Overall, this was a beautiful Lambic. I wish we could get more Unblended Lambics here!

750mL bottle, courtesy of kramer17801. Thanks, Jason! Pours a murky, orange-earthy color; mostly headless; thin, off-white head with slight lacing. Enormous amounts of funk, horseblanket and citrus; some overripe white grapes, oak, and a solid touch of chablis and cheesiness. Medium-to-full mouthfeel: loads of cheese, white grapes, funky citrus and horseblanket upfront; excellent integration of citrus and unoaked chardonnay grapes; minerals and grape skins. Lengthy finish, showing white grape skins, soft oak / wood, tartness and minerals.

Courtesy of kramer17801, who is the most awesomest ever. Hazy pale body with a tiny white head. Stinky,cheesy yogurt nose with melon, some lemon, bile and horseblanket. Very sour, lightly sweet taste with cheese, melon rind, citrus peel, white wine, grape skins, lemon, yogurt and oak. Medium body is round with moderate carbonation. Finishes with a sourness that lasts for an eternity.

Thanks to Jason for this one. Cloudy yellow body. Aroma is sour, funky like feet. Flavor is dry, sour, bretty like gym clothes. Effervescent and light on the palate.
