Aroma is sour, lemonjuice, acidic, barnyard... pretty typical lambic. Nice. Before I go into the flavor, I have to admit that I have a cold so my senses aren’t functioning normally. I have to rate what I’m tasting though, so... Flavor is more mild than anticipated, given the strong aroma. Slightly sour and acidic-tasting. Smooth palate, very dry finish. Good, but not great. No carbonation on this one though some clear fat bubbles form from the pour but disappear quite quickly. Light foam makes swirls on the top. Aroma is cidery, brett, lemon, green apple. Tart. Aroma improves with warming. Taste is similar. Acidity and sourness are quite subdued and tolerable. Soft on the palate. "Basic" funkiness with sour, tart, and stink. Not as overwhelming as others I’ve tried. Barnyard character. Sour lemons. Slight classic geuze aroma but more mellow and with a slight peppery note. Quite citric to acidic flavour, dry and fruity. Medium body - well, perhaps even a little watery, only moderately sour although you do indeed sense the usual Brett and horse blanket characteristics. [Courtesy of Thomas E, quality tasting @ Papsoe] Real unblended stuff, expecting some raw Lambic, but was surprised over its sophisticated and soft complex bouquet. Spare fizzy white head that mostly diminished. Cloudy orange like color. Aroma was of course the well know Cantillon and as I perceive it with notes of perfume, barnyard, leather. Underlying wheat, caramel and fresh apple and sour berries. Medium to full bodied with a soft carbonation. Moderated sour notes with good counter sweetness. Weird burnt corn aroma, not in a good way. Hazy, orange brown body with very quick white bubbles. Hints of wood and sour citrus in the flavour. Medium body is a little sour. Interesting but doesn’t stand out.
