Commercial Description:
A classic, specially selected single batch of lambic, aged three years in the cask. The only unblended real lambic you can find anywhere.

tap at falling rock. clear light brandy pour with no head. aroma is beautiful. grape, oak, complex and hard for me to describe. very smooth. sourness is moderate. apple, pear, great balance. very nice.

750ml bottle, thanls to RagallachMC!! cloud orange, no head to speak of. Aroma is a great lambic sour funk, with some sour citrus, and wet hay. Flavour is right off the bat not as sour as i’ve had in the past, and is quite mellow.The sourness intensifies in the finish, and really stick to the back of your throat. WOw, this is a great lambic, wish i had more!

Bottle cap & corked. Poured hazy orange color with an minimal frothy white head that mostly diminished with virtually no lacing. Moderate sour yeasty raw wet wood aroma. Light to medium body with a dry texture. Medium sour citrus flavor with a medium sour finish of moderated duration. This is a standout for style beer.

Bottle 75cl 2001 @ 16th Weekend of Spontaneous Fermentation 2007, Opstal. Clear medium yellow color with a small fizzy fair lacing white head. Aroma is light sour / sweet, grape, fruity, apple ! ala cider / white wine. Flavor is light to moderate sweet and moderate to heavy acidic with a long duration. Nice balance. Body is light to medium, texture is watery, carbonation is flat. ;o))

Almost clear amber/orange with a few big bubbles that don’t really qualify as a head. Don’t know why they felt the need to cork the bottle. Aroma of grapes, lemons and extreme sourness. Vinous and dry taste. Very sour. Pretty good, but I’m not looking forward to the two or three glasses it will take to polish off the bottle.
On second thought, I’ll re-cork it. It’s not like it’ll lose carbonation.

Bottle from Capone’s. Orangy dark strawish pour with very little head. The aroma was nice, with a lot of tart fruit, including white grapes, apple, and pear, plus earthy yeasty musty basement hints. The taste had almost no carbonation, showing a cidery mouthfeel, albeit much tarter and more complex, with chardonnay, pear, apple, and earthy flavor hints.

750ml. dated 8/22/06. pours clear orange with small bubbles around the rim. nose is real nice, sour and tart notes, white grape, very oaky, apricot, apples, and musty. flavor has an accessible sourness, tart, white grapes, lots of oak, mild acidity, actually very easy drinking and refreshing while still having that lambic charm and grace. this pours very close to still and would have improved with a more lively carbination. this could also use a longer palate. i’m really into this beer.

From bottle pours a light orange/peach color. No real amount of head. Tart tangy flavor with a smooth finish.
