Commercial Description:
A classic, specially selected single batch of lambic, aged three years in the cask. The only unblended real lambic you can find anywhere.

Bottle (from Cantillon, ’03 Bottle ’07). Rich golden orange apple juice appearance. Soft slightly cheesey cellar aroma with light citrussy acidity. Mild earthy fruitiness in mouth and restrained sourness for Cantillon. Laid back and very drinkable but with backs of flavour. I imagine this would be more aggressive after longer in the bottle.

bottled aug 22nd 06’- pours a clear dark yellow with no head. aroma is tart apples and oak. has a light to medium body with no head and just a trace of lacing. flavor is tart apples and oak. not to bad of a unb lambic just a bit young i think, would probably be a bit better aged. has a little yeast taste as well. has a little barnyard funky taste, and a bit of lemon taste and aroma. like someone said before it almost tastes like a white wine. it is a tad bit to acidic for me as well almost burning the throat type of feel going down.

Dry light colored wine smell. A few things going on with the aroma I can’t quite put my finger on. It’s such a pretty orangy yellow color. Light orangy yellow. No head. Sour, dry wine like taste. Tangy as all hell. Lemony and wild. Some mild bitterness. Very tart. Makes you smile. This would be perfect with a champagne esque amount of carbonation. Shouldn’t have poured a whole 12 ounces though.

Some of the previous commentators have good points: some carbonation wouldn’t hurt, however, it is a beer with many subtle nuances, and some of that subtlety might be lost with aggressive fizz. Acidity isn’t overpowering. It almost reminds me of a good white burgundy.

(2003 vintage purchased at the brewery in late 2006.) I’m with the wise guy on this one - completely flat plate effectively kills the beer for me. Strictly medium strength in terms of acid, sour fruits and intensity, particularly in the contex of a Cantillon offering. Orange apricot hue with no head. Sour and citrus fruits on the nose. Much more bitter and firm to taste; citrus and acid in abundance early, but the palate suffers from a chronic lack of fizz which flattens and dulls the palate. Flavours tail off as a result. Disappointing.

2005 bottle.Poured a lightly hazy orangey-yellow, no head, virtually no effervescence. A ton of funk in the nose, barnyard, wet horse, wet straw, with less prominent fruit notes such as persimmon, apricot, peach and something tropical like mango. Still, as in uncarbonated, which I’m not too keen on, but I suppose thats to be expected for unblended lambic. Flavor is nicely sour/acidic, with a drying tannic finish which lingers just about forever, along with something vaguely floral. Moderately sweet up front, with a mild fruit showing, but the acidity quickly takes over. Regardless, its not an overly hard acidity, and it remains easily palatable. Curious, interesting specimen, and a difficult rate.

Peach nectar with no head. Dusty, hay and barnyard aromas with some fruity notes. Not really as aggressive as most lambic types. Even comes off a bit sweet. Rather full bodied with very little carbonation. Doesn’t make me think of lambic at all.

Pale gold, no head, no lace. Dead flat. Hard to believe this is a beer. Nose inoffensive for a lambic, no real skunk or barnyard stink, just some sourness. Taste overwhelmingly sour and citrus, green apples. Actually quite enjoyable. Mouth dead flat, like apple juice. I really enjoyed the flavor, but the dead flat palate killed this for me. // Had draft. Slight head, slight moth feel. Worked a little better.
