A classic, specially selected single batch of lambic, aged three years in the cask. The only unblended real lambic you can find anywhere.

750ml. Purchased at Holiday Wine Cellar in Escondido, CA. Cork says 2005. Cooled and let sit over night. Slightly cool to the touch but not cold. Pours like apple juice with a a bit of carbonation and bubbles around the top. Aroma is pure guezey goodness, funkadelic. The taste is sweet, tart, woody, sharp, and vinious. Some fruity notes in there too. Wow this is complex with a lot of differnent things happening. Just what I need to help me contemplate my next move...

Cork says 2004. Pours an apple juice sort of color with an apple juice sized head. First thing I smelled was apples too. Well, I smelled unripe green apples like the ones that grew on the little tree at the old man’s house up the street. Except this beer has a rather funky smell that I would have been horrified by in my youth. Nowadays I tremble with excitement when I smell something that funky. Nice solid sour apple front that explodes on the tastebuds before leaving a neat scuppernong wine finish that manages to be nowhere near as sweet as the actual scuppernong wine. A fine beer to split with someone. As much as a I love it, I couldn’t drink the whole 750mL by myself. Luckily I have a lambic loving roomate.

Pours gold with some minimal carbonation. Smells of tarte lemon, farmyard funk, dust, oaky and perfumy. Tastes of tarte lemons and not overly sour which was a little surprising. Some underlying hints if earthiness emerge throughout the drinking. Mouthfeel is light and airy with the finish a nice refreshing tarte lemonness that lingers forever. This is a truly amazing beer I wish I could drink every day.

750mL thanks to Dr. Bill. Horsey wild grunge with an almost lemon goat cheese lactic flush. Mexican cilantro floralness kicks in and runs through the nostrils. Pours a clouded pale gold. Crushing sour tannic flavor, with raging earthy mustiness. Sewer notes? Very parching and old, with fresh bandages. Astonishing acidity and finishes with a hop-lavender flutter. Smacks on lemon pith. A little coarse and biting, but somewhat endearing.

Bottle. Bright gold and yellow with no head. Aromas are lemon and wood with hints of sugar. Lacks the cheesiness of some of the Cantillons but still has some barnyard notes. Flavours are light and woody initially followed by lots of sour lemon and grapefruit. The finish is very acidic. Not the best Cantillon but still very good.

On tap at O’Briens. Pours a slightly hazy, lemony honey color with almost no head. Aromas of granny smith apples, lemon rind, and soft pears. A bit on the sweet side, but plenty of funky barnyard characters pleasant. Medium bodied, lightly carbonated mouthfeel. Some tasty chardonnay tannins and light oak provide most of the flavor depth, along with a bit of musty lemon rinds. Really could use more carbonation to liven up the mouthfeel and help give it a bit more of a crisp acidic edge, as I find it a touch to sweet as is.

750ml bottle. Pours a hazy yellow with no head. Aroma of citrus, funk, oak, and acidity. Flavor is lemony and tart with oak and a little bit of funk. Very thin smooth mouthfeel. An excellent Lambic.
