Commercial Description:
A classic, specially selected single batch of lambic, aged three years in the cask. The only unblended real lambic you can find anywhere.

From Cantillon, Brussels, Belgium. Bottled, 280309. Orange-amber with no head. Aroma of sour fruits. Flavor is tangy with wood, apple and alcohol.

I was able to sample this on tap at Max’s Taphouse in Baltimore during Max’s Belgian fest. Pours a hazy yellow orange with no head. Smells both sweet and tart, slightly grassy, some slight funk. Flavor is grassy, tart, sweet, a touch of that Belgian barnyard funk and some white grapes. High carbonation in the mouth but also slightly chalky with a lasting tartness. I very much enjoyed this, probably the best of the day.

Bottle 750ml. Pours an orange golden body with a thin white lacing and a thin stream of co2. Light honey and spices, and woody apple hints. Citric and lactic acid but not over powering at all. Some fruity citric notes and light woody funk notes. This is absolutely delicious, very impressive.

750ml bottle of one surprising lambic that cost me $20. Bottled 09/05/2007. No head, and almost no bubbles. Still, orange, smells musty yet juicy. It tastes like so many different things, juice, apples, sour, must, basement, no wonder gueuze is so good. This lambic did not disappoint. Serving type: bottle Reviewed on: 03-15-2009 05:13:07

750ml corked bottle. Lambic Bio 2006. BB September 2028. Didn’t occur to me until I read the label a bit more thoroughly that this was an unblended lambic. I was a bit suprised to see no carbonation on the body, but that explained alot! Anyway, body is a flat shiny gold, only the slightest haze. Plenty of tart apple straightup on the nose, unripe stonefruit and lemon rind in there, bit of hay, integrated oak and cheesy funk. No carbonation which somehow brings a smile to my face, whereas the champagne-like carb of most lambics kind of makes drinking quite an effort. Lengthy palate, nice tongue-coating acid and tannin, with a balancing sweetness. Lemons, unripe peach, sour apple all seem to emerge nicely on the body. Oak is smooth, lending a hint of vanilla and spice, bitter citrus peel seems to be a constant driving force throughout. Slight cheesy funk towards the finish. Finish is not nearly as brutal as other Cantillons, certainly not as vinegary, still quite tart yet balanced by a nice fruity sweetness. I found this to be personally the most enjoyable Cantillon to date simply just because of its approachable nature. It still has the traits of a Gueuze, without the brutal carbonation and acid. One would argue its less complex, yes, but I can actually see myself sitting down and enjoying a bottle of this.

750ml bottle via trade a while back. Pours a clear (on the last glass very cloudy) glowing golden orange with 0 head. Nose of tart apples with citrus peels and farmhouse funk. Flavor was both sweet and sour, with a hint of oak in there. A very underrated Lambic.

Thanks to Cmillward for the taste! Pours a cloudy golden color. Aroma is strong funk with apples, pears and lemon rind. Flavors are more funk and sour fruits with some vanilla and honey. Very good.

Solid stylistically and overall strong. A nice sour dough and yeast nose with a slightly cloudy and nearly still pour. Apples, lychee fruit and grapefruit followed by a sly and the family stone dose of funk. I approve.
