Beer 1000! Big thanks to all the brewers who contributed to getting me here, as well as to all the folks out there who traded with me and gave me beers as gifts. Actually, this really is beer 1001 due to having two at lunch today, but I’ve held onto this thing for a year and a half now intending it to be beer 1000, heck if I’m not going to enter it as 1000 now! Picked this up at Cantillon, 2003 bottling. Pours still as promised, pale apple juice appearance with lots of tiny floaties. This thing threw quite a sediment in the bottle as well. Aroma was sheer barnyard, tart and aggressive. Flavors revolved around barnyard, mushrooms, very faint cheddar, tart green apples and a bit of wood. Piercingly sour, and dry as a bone on the finish. Pure lambic in nature. My only complaint is that it was a bit thinnish, and the finish was extremely short. Still a marvelous concoction.

Slightly murky orange straw body with no head. Fruit notes in the taste mainly citrus, grapefruit, orange, lemon and a bit of green apples.Tart but not stand out and also sour. Not as good as the Iris.

07.16.05 No head over a dark straw. grassy nose and light barn. Some wood, but not as much as I’d have expected from something aged 3 years in the cask. Still body. Refreshing but lifeless.

Virtually still, dark lemon body, flat in the center with a thin surrounding rim of white carbonation. Aroma of hay, musty barnyard, and bitter grapefruit. Dry, whole grapefruit flavor with nice strong sourness and some unexpected bitterness for a lambic. Some noticeable musty oxidation with strong wood and cork qualities. Nice, distinct change of pace. This is roots beer.

2001.... Aroma:Chesse,strong lambic aroma... Appearance:Light hazy gold,no head... Flavor:sour,watery,dry...Its more easy to drink than the other cantillon ...

Sampled at the RBSG 07 Grand Tasting. Excellent sour nose on this beer. with a wild field character. Very sour body with an earthy tinge.

I have only managed to try a few lambics, but they do have an addicting quality to them. This one poured a cloudy yellow-orange with just a tiny off-white ring of carbonation. The sour musty aroma was immediately noticeable from several feet away. Had the classic sour/musty lambic flavor that always reminds me of the rind on brie cheese. This was enjoyable to sip, although I do agree with the reviewers who mention this would be better if it had stronger carbonation. Regardless, one sip begged another.

Bottle. Very yummy. Clear golden in colour with a rather large head. Very well balanced sourness and sweetness. Hints of apple.
