I think this is my favorite Cantillon. Pours a dark golden color, still, no carbonation. A mild flavor for Cantillon, but it is unblended and aged for 3 years! A tart sourness, some oak in the flavor.

Some of the previous commentators have good points: some carbonation wouldn’t hurt, however, it is a beer with many subtle nuances, and some of that subtlety might be lost with aggressive fizz. Acidity isn’t overpowering. It almost reminds me of a good white burgundy.

Golden orange in color with no head. Aroma is fruity and tart. Taste is slightly subdued with light fruit, oak and tartness.

750ml bottle from Puzzl. Pours a beautiful orangish color, as if a mango imploded inside the glass, very minimal white foamy head. Nose is very fresh, nice hints of fruit, some grass and outdoorsy notes. Flavors of ripe fruit, nice and juicy, some yeast, hay, grass, and a smooth clean finish.

25.4 oz bottle, 22AUG06. Clear oaky orange. A stiff pour yields a dusting of big white bubbles. Dusty lemon peel with hints of floral. Funky nose intensifies after the first sip. Almost no carb with much lighter than expected sour tang. Wavers between lemon and grapefruit juice but with softened, restrained acidity. Subtle sweet hints of pear and honey then some black pepper.

1999 vintage. Poured a translucent yellow/orange, white head. Aroma was pungent and cheesy, acidic, along with some cidery notes. Flavor was sour, some apples, and big time barnyard. Acidic mouthfeel, finshed very dry. Quite a treat.

Hazy gold w/ relatively low carbonation & small, frothy white foam. Tart, acidic barnyard aroma w/ sharp cheese & leather notes & a light oaken, vinous quality. Light-medium, acidic feel. Very dry, tart, leathery acidic flavour w/ barnyard notes, a light fruitiness, & an earthy woodiness.
