cloud orange, no head to speak of. Aroma is a great lambic sour funk, with some sour citrus, and wet hay. Flavour is right off the bat not as sour as i’ve had in the past, and is quite mellow.The sourness intensifies in the finish, and really stick to the back of your throat. Aorma of sour yeast, oak, vinegar, musty barn funk, and some floral and citrus undertones. Flavor is sour, vinegared oak up front, followed by some funk and a sharp floral-citrus-mint combination. Dry, sour, citrus, oak finish and aftertaste. Body is too thin, would benefit from a little carbonation, just a little. Lemon grass and citrus resin aroma with leather, limestone and bittersweet vanilla. Though the palate lacks all carbonation, this one doesn’t need it, because you are transported back to a time when beer isn’t supposed to be fizzy, where all of the flavours are completely natural and 100% unique. Lemon curd and custard aroma; lavender, goat cheese, and funk laid low and quiet, subject to its refined characters of sweetness and delicate earth, with a touch of puckering fresh grapefruit acidity.
A dull grassy sourness, strawlike and quite plain, in the flavor, lacking even a hint of traditional confrontational funkiness right away; rather, it’s mostly a briny saltwater with a distant hint of fruit skins and leafiness. Late hints of white pepper, cinnamon, and cellar stink as it approaches room warmth.
Light-medium palate, watery and dusty; finishes with some gruyere rind, earthy salts, and maybe seaweed; certainly quite green and still salty, whatever it is. Though it’s quite tranquil, its calmness is not hard to appreciate; a lambic with plenty of funkiness and less sourness, and that’s fine.
