2000: Acidic champagne taste, with an intense end. 1997: Light yellow. Much more complex than its newer brother.

On cask at Spuyten Duyvil at their Cantillon & de la Senne event. Pours a hazy apricot color with a thin to medium white head. Lovely funk, with nice notes of hay and wood. Thin to medium bodied, with light wood flavors. Excellent sourness with a nice balance of acid and vinegar before a long tart bretty finish.

Big thanks to Fin for this bottle! Vintage 2005. Warm orange pour with just a touch of haze, a little scattering of white bubbles. To smell: a few Holstein cows graze on rich green grass. Downwind, vines loaded with unctuous spicy wild muscat grapes, bright in the fall sun and dusted in yellow goldenrod pollen. Sharp grapeskin musky tart bite. No, not quite right: there is a sharp flinty grapeskin quality to the flavor, but the tartness is actually quite soft. Esp for a Cantillon beer, which to my palate often push the acidity a bit far. Grass, iodine, salt. Very fine carbonation, just a hint of tiny peppery fizz. At first I think, could use more, then I think maybe this is just right. Very refreshing and lovely. A cracking good beer. Thanks again Fin!

2005 Bottle. Pour is a clear gold with zero head. Aroma of barnyard funk, sour fruit, and oak. Nice sour flavor of tart, funk, leather, fruit, and citrus. Great flavor, but it has almost no carbonation... very strange. A very drinkable refreshing lambic, not to sour.

Pour was hazy like a lambic should be. Nose was yeast. Taste was bitter and woody.

Organic, 2005. Gold, barely any head. Looks still in the flute. Faint on the aroma, some citrus rind, some cherry. Creamy character, white underripe peach, lasting tart/bitter finish. I’m smiling.

From draft engine @ Moan & Dove. While in many respects so much was muted, what came through was a symphony and everything that I was hoping for at the moment. A real delight. Subtle, only ever so slightly sour, mildly mouth coating. Rich, but light and all too easy to drink, but at 5% I guess that’s believable.

Pours flat and hazy. Big stinky funky woody sour aroma. Has some fruity notes also, maybe some cherry and pear. Also a bit of breadiness. Very clear and strong in smell. Passes fast to the throat in a fleeting manner, taking all vestiges of the previous meal with it. Repetition captures the flavor. Musky and tart with something of an acidic burn in the finish. The really interesting part of this beer is the retronasal aroma. It has some juniper and dried apricot that is very appealing but quickly lost. Somewhat creamy body with a moderately dry finish. Really an exceptional beer.
