hardcore. headless, tan colour, scooped out of a bucket. tasty barnyard stink. really really sour and slightly fruity, with fat cheesiness on the palate. recommended for those who like stinky cheeses

On tap at the Stumbling Monk in Seattle.

Pours a light yellow-orange, slightly cloudy with a nice white head. A gorgeous lemon juice and oak aroma comes through marvellously, little harshness or vinegar, just a eep rich lambic goodness. The flavor is a beautiful dry sourness, plenty of complex wood-and-lambic but not ostentatiously so; the sourness is uncompromising but ot the least bit aggressive or stinging. Crisip, delightful palate.

Truly a wonderful beer.

Robe dorée foncée sans mousse ni effervescence. Arômes sûres et acides. Saveurs sûres de blé, acides d’agrumes.

Draught @ The Moan & Dove, as well as bottled: Pours a golden onion skinned liquor hue. Great stinky funk nose, band-aid, ribber band, horse blanket, sour funk yo. We need the funk, gotta have the funk. This is near perfection as far as I am concerned. This is lambic what it is all about. Draught version is also quite delicous. Is there anything better than Cantillon?

2002 on the cork. This unblended lambic pours out a hazy golden color. The aroma is vinegar and bread. You can tell this is going to be a pungent puckerer. The taste is very sour and wine-like. Medium mouthfeel and carbonation. Very interesting--if you like the sour stuff--then this one is for you.

2004 bottle at Kaisla, Helsinki. A bit hazy with no head. A fruity aroma, faint. The taste can best be described as a kick in your face! Fantastic - try this if you can.

vintage 2000. the overpowering aroma was very aour and vinegary. it poured a slightly cloudy gold with no head. it was a very strong flavor, musty like a damp basement. i don’t know what falvors i actually detected. it was very watery in the mouth. not at all desirable, refreshing or enjoyable, stil, i’m glad i tried it. i guess you have to let it grow on you.

Poured a still amber, withi a grainy cloudiness. Aroma of acidic grapes, apricots, some funk, and a bit of sweetness underlying it all. Taste is tart up front with farmhouse funk with some bitter dried apricot in the finish. The body is surprisingly full. Overall I’d say this is not the most pungent Cantillon I’ve had, but is actually quite easy drinking and agreeable. NIce.
