Commercial Description:
A classic, specially selected single batch of lambic, aged three years in the cask. The only unblended real lambic you can find anywhere.

On tap: Very cloudy and golden colored. Strong sour aroma. The body is quite light and tart with grapefruity flavor.

1999 vintage, sampled 2/2004: light hazy orange colour, no foam, strong aroma of cheese, vinegar and green apple, very acid, sour, quite light-bodied, the finish is very long, dry and acidic with notes of cheese and haye - yes, it's hard to drink and yes, I like it !

1999 edition!!!!!!Pretty good, extremely bitter/sour/acid nose and palate. Absolutely no head, tried to pour it from a high distance, but still, no head!!!! Very interesting, very sour, and very stinky barnyard character, pretty mental beer, but amazingly good.(4.4) Re-rate: sublime. seriously juicy, sour stinky lambic, this is much better than my previous rating (above). Really well balanced aswell, nothing felt out of place. Nice sour attack on the tongue, really dry aswell, left me wanting more after every sip (draught- GBBF 03')

One of the last 1999 bottles at the brewery - an exceptional, JP Van Roy says. He isn't far wrong. Golden colour, no head (3 yr. old lambic!). Nose of aged oak wood, of old leatherbound books in an antiquariat and of wild mushrooms. taste gives more wood, tannines, unbelievable but there is some unfermented thing underneath and sherrywood casks. The finish is made up by all the volatiles from the above retreating. A dream of a beer...

Hazy yellow colour with a white head. Malty, fruity and yeasty aroma with notes of flowers and dust. Malty, tart fruity flavor with citric yeasty notes.

Bottled. Vintage 2001. Golden coloured. Nice aroma of grapefruit and wooden cask. Sour, woody and fruity flavour. Very complex. No carbonation of course. [Rating: 4.7]. Vintage 1983, tasted Fall 2004. This was one of the greatest beer experiences I have ever had. This incredibly complex beer had turned even more complex. There was still loads of wood, grapefruit, citrus, acidity and the classic lambic elements, but also some really pleasant maturity notes. Unblended lambic must be the very best beer style to age. [Rating 5.0].

Bottle (75cl): Golden, no head; solid mouldy, cellary nose, brett as well; robust dry, sour-tart flavour, light bodied; green apples, wheat and a huge acidity in the finish. Masochists like this "beer"......

The Lure:
The Cantillon Gueuze signature is definitely present, although it seems to be a bit tired as there is less carbonation to push it. A sugary component also appears to make it distinctive.

The Festivities:
Musky pineapples and orange pulp merge with the lemony tartness, starfruit sourtalks the honey sweetness, as the cask ale feel makes the brettyness feel gentle. This is a white wine/table lambic combo, with subdued tartness and acidity for a Cantillon.

Transcendence:
Dormant from the distance obviously does not prove to be a reliable source in such a case.
