Friend brought this over and shared the bottle, dropped like $27 or something on it. Pulled out the cork with little to no carbonation. Pours out a slightly cloudy orange color. If you shook the glass enough a tiny head appeared. Aroma very sour and vinous, with some earthy oak undertones. Flavor was tart and sour, earthy oak notes, some citrus. Interesting, but I don’t know if it was worth the price tag.

Pours a cloudy golden hue with no head. Aromas of aples, flowers. Flavors of apples, pears, yeast with a bitter/sourness. I may have had an old bottle that wasn’t stored well.

My favorite Cantillon so far (12 sampled as of January 2007). This is funk at its most mellow, at its most refined and certainly at the height of its glory. Pours a murky, oily looking beige/orange with not a hint of carbonation. Aroma is a knockout: gargantuan oak barrel, peaches, Vermentino grapes(awesome), grapefruit juice, lemon, pepper, leather and plenty of Brett. Barnyard funk of a lighter variety than as with typical Cantillon(or is this typical Cantillon?), I suspect because no carbonation is forcing it upward and out of the glass. The flavor is just as rich and outstanding. warmer now, more profound barnyard and sour notes arrive with a twisted fruit and noble hop character. Also detected are substantial lemon oils and a throttling oak taste that punishes and carresses my mouth all at once. Palate is as smooth as could be but for the funky bashing my taste buds are enduring. Finishes with a steady lingering sour ness that only subsides if I drink something else. This is definitely not a beer for the faint of heart or uninitiated of palate. Older versions have proven even more exciting and refined. Bad Ass.

Clear golden with no head. The nose is very grapey and satisfying. Kind of like a warm wine mixed with lemon peels. The taste, however, is flat and sour. I guess I dont get it. It is interesting, but I just dont get it.

Good bubbling golden colorm with a decent head on top. The aroma is a rather grassy one from a distance, but upon serious inspection, its a saltish yeast. Flavor is a bitter sweet, as expected, but has a fine distinction to it.

2002 bottle. dark golden color, slightly hazy, no head. sour and acetic nose, like fine white vinegar. flavor is tart and sour, some unripe peach/overripe lemon. little carbonation. acidic flavor, thick & juicy mouthfeel. a little dryish and faintly woody. tart finish.

Aroma of wet wool blanket brett, onion peels, sour oranges, vinegar, and acidity. Taste is lemon, sour oranges, high acidity, barnyardy/brett, and onion. Tart finish, but a surprisingly light finish which seems balanced?

750 ML bottle: Light amber w/ a thin white head, not lasting, maybe due to a dirty glass or the fact there was no pop from the cork. Sour and horse blanket aroma with all the barn yard that goes with it. Very classic lambic aroma! herbal hops, and a bit acetic. Also leathery and cork woody aromas w/a bit of oaky wood. Sour acidic flavor throughout, but not as sour as I’d imagined. Woody and fruity as well with grainy malt. Also has an earthy flavor in the dry finish and aftertaste. Very low carbonation, med. body, and smooth. A good lambic, but I’m not a fan of the style. A bit too sour for my tastes, but as I stated, it’s not an overwhelming sourness. Good for what it is, but it’s not for me.
