Pours a golden / orange color with zero head. Aroma is of sour apples, lemons and baby funk. Taste of sour fruits, flowers, aspirin and earth. No carbonation on this one though some clear fat bubbles form from the pour but disappear quite quickly. Light foam makes swirls on the top. Aroma is cidery, brett, lemon, green apple. Tart. Aroma improves with warming. Taste is similar. Acidity and sourness are quite subdued and tolerable. Soft on the palate. Bottled 09/05/2007. No head, and almost no bubbles. Still, orange, smells musty yet juicy. It tastes like so many different things, juice, apples, sour, must, basement, no wonder gueuze is so good. This lambic did not disappoint.

Acide, citronné et signé par les levures sauvages au nez. Les délicieux arômes nous font aussi penser au gazon jaune séché par le soleil. Quelques notes boisées, meringue et typique brettanomyces. Toujours dans le département de l’excellence, cette version en fut semble moins expressive et acide en bouche que la version en bouteille. Facile à boire et plutôt accessible pour une Cantillon. Nearly-offensive aroma, musty fruit and acidic vomit (in a nice way). Incredibly complex flavors, very tart, dry fruit, wood. Very dry, puckering finish. Aroma contains a lot of cut grass, oak, yeast, and salty, funky cheese. The taste is lightly sour, with some funky cheese, lemon, but becomes far more salty towards the finish which I did not really care for.
