2002 Bottle. Golden lambic with no head. Nice sour aroma with notes of honey. Restrained sourness in mouth, with light horseblanket notes. Light bodied. Nice puckering effect. Sampled at Quintessence Cantillon 2005.

2005 bottling. No head (almost still). Body is hazy medium to dark yellow, bottle conditioned. Aroma is lightly malty (toasted grain), moderately yeasty (barnyard, horseblanket, cobwebs), with notes of sour apple, lemon/lime, wood, sherry/cardboard. Flavor is lightly to moderately sweet, moderately to heavily acidic. Finish is lightly sweet, moderately acidic. Light to medium body, watery texture, soft/flat carbonation, lightly astringent. Not very deep or interesting.

At the Hopleaf in Chicago--man do they have a Belgian selection to make you weep! Dull, flat amber color, small but lasting milky head. Nose of sour apples, barnyard, grass and candy; flavor almost as intense and complex, extraordinarily sour, woody and smoky. Vinegar seems present in the nose and flavor as well, but this didn’t bother me; guess I’m getting used to these. Smoothes out just a bit as it warms. Extraordinary; can’t wait to try more Cantillon.

i approached this with trepidation after a visit to the cantillon brewery had left me ill and belching dried fish. but i took a sip and decided i couldn’t stay mad at cantillon

Bottle. Frothy white almost no head. Yellow colour. Light malty veryacetic aroma. All the horse-related adjectives can be used: Blanket, barnyrad and leather. Bitter and very acetiv flavor. Average finish. Oily palate. Weird experience but thats unblended lambic take it or leave it.

750 ml bottle. Bottled 05 Sept 2007. Hazy orange amber color with no real head. Slightly acidic aroma. Rather thin, with no carbonation. Flavor is mildly acidic with a little light stone fruit and some citrus. Finish is about the same, but a little wood is detectable. It’s a very good drink. It seems to go well with cheese and nuts.

No head no matter how hard I poured. A slightly cloudy gold and orange coloring. The aroma is rather tame for a Cantillon. Lemons and hay jump out at first. Then hints of vinegar, apples and barnyard come out, but only in a subtle way in the background. The mouthfeel is greasy and light. Notes of melons, lemons and sour apples. Just a little bit of tobacco and some hay in the finish. No carbonation at all. Just too little in this one all around.

Very sweaty and intimate, personal, musky aroma incorporates rubber, and lychee nuts minus the sweetness. Very hazy orange-tan with thin, white, fully diminishing head. Pineapple, lemon and grapefruit flavours blend nicely with a very quiet underlying brett character. Sticky in the mouth but dry and puckering in the finish. Bottle enjoyed with MartinT, muzzlehatch and Rastacouere.
