The aroma is oakey, slight citrus/lactic note with hay/wet leaves. Carbonation is very minimal. First taste is an explosion of complexity with a good sourness that I truly enjoy in a lambic. Aroma was strong - summer fruits (apples - thanks, Alicia), musty oaky wood, yeasty; a ton of aromas that I can’t think of actual words for. Taste was vinous - very smooth and thicker than the other Cantillons I tasted (at Buckeye Lambic tasting 6/12/04). Medium sour and tart, some vinegar; oak at the end with a thin sweetness that lingers on and on. There’s a spicy peppery flavor that tingles the back of the throat. Pours clear pale orange with a thin head and weepy lacing even though there was no sign of carbonation when the cork came out! Aroma of vinegar, wood, and malt. golden/orange color with almost no head. Tart, yeasty aroma of grapefruit,
and sour apples. Flavor also sour, but
not overly so. Hints of grapefruit and other citrus fruits along with a strange,

Aroma is very acidic, wet hessian, and mild raw apple... there are also some woody earthy notes playing in the background. The mouthful was ferociously sour, felt on the back of my nostrils, more raw wood and fruit in there too. The finish is acidic and outrageously dry. Very enjoyable.
