May 22, 2005 (vintage 2002, bottle) Dark golden, low creamy white head. Complex and acidic aroma of oak, wood, cork and salt. Flavour is acidic, woody and cheesy, small notes of leaves. Sourish and salty woody finish.

Dec 23, 2003 Sour aroma. Cloutdy gold color with white head. Very tart, bitter, and sour. Looses carbonation quickly.

Jan 24, 2005 Very sweaty and intimate, personal, musky aroma incorporates rubber, and lychee nuts minus the sweetness. Very hazy orange-tan with thin, white, fully diminishing head. Pineapple, lemon and grapefruit flavours blend nicely with a very quiet underlying brett character. Sticky in the mouth but dry and puckering in the finish. Bottle enjoyed with MartinT, muzzlehatch and Rastacouere.

Feb 15, 2009 Draft, on handpump at Monk’s cafe. Pours hazy golden, with minimal off-white head. Aroma is mildly tart, with notes of mild citrus and wood. Flavor is tart, with notes of citrus, especially grapefruit, apple, and wood. Fairly flat. This is very drinkable, but I don’t find it as complex as most other Cantillons.

Aug 10, 2006 Bottle. Sourish, earthy aroma. Dark golden colour, almost clear, no head. Totally flat, no carbonation. Sour flavour, no surprise, earthy and nice. Hint of aluminium in the aftertaste, but that wears off.

Nov 19, 2005 Poured a still amber, withi a grainy cloudiness. Aroma of acidic grapes, apricots, some funk, and a bit of sweetness underlying it all. Taste is tart up front with farmhouse funk with some bitter dried apricot in the finish. The body is surprisingly full. Overall I’d say this is not the most pungent Cantillon I’ve had, but is actually quite easy drinking and agreeable. NIce.

Jun 26, 2007 Pours hazy orange with no head to speak of. Aroma is sour oak and lemon. Flavor is sour, but not overpowering. There is a nice woody flavor in the background.

Oct 17, 2006 75 cl bottle of Grand Cru Bruocsella Lambic Bio 2002. Light copper colour with just a light haze and only a handful of large bubbles on the top. Spicy, gently peppery nose with apples and only notions of barnyard. Dry, woody taste; tart without much citrus - rather vinous grapes and apples. Sulphur, fruit and mild bitterness in the aftertaste. A bit oily, very smoth texture with a very dry finish, yet without much astringency.
