A classic, specially selected single batch of lambic, aged three years in the cask. The only unblended real lambic you can find anywhere.

Couleur blonde dorée, presque translucide. Acide, citronné et signé par les levures sauvages au nez. Les délicieux arômes nous font aussi penser au gazon jaune séché par le soleil. Quelques notes boisées, meringue et typique brettanomyces. Toujours dans le département de l’excellence, cette version en fut semble moins expressive et acide en bouche que la version en bouteille. Facile à boire et plutôt accessible pour une Cantillon. En fut au Moan And Dove, 21 Mai 2005.

Bottle 2005 vintage: Pours an orange golden color, with virtually no head and no carbonation. Aroma was sour, with some funkiness. Flavor had a lemony tartness to it, some oak. The mouthfeel was what really threw me off with this beer, the complete lack of carbonation gave it an almost wine like texture, with a very dry finish. It was just bizarre and took me a while to adjust to it. By the end of my glass I was starting to enjoy it, though I think I still prefer the blended lambics.

Wow. Never had anything like this before. Had at Max’s on Broadway in Baltimore during the Belgain Beer Festival. It looks like any other pilsner or pale lager, light and golden. Lots of carbination. Smells of gasoline and sour lemon. Tastes the same. Reminds me of Lock Jaw candies we ate as kids. Very sour. Surprisingly it doesn’t have an offensive aftertaste. The initial blast of sour lemon is pretty much all you get. Great to share amongst friends but not recommended for a night of drinking.

From bottle pours a light orange/peach color. No real amount of head. Tart tangy flavor with a smooth finish.

Organic, 2005. Gold, barely any head. Looks still in the flute. Faint on the aroma, some citrus rind, some cherry. Creamy character, white underripe peach, lasting tart/bitter finish. I’m smiling.

Bottle. Pours a golden yellow color that is slightly hazy. Smells slightly sour with a nice fruit and earth smell. Tastes similar with sourness first and then sweet. Very mild carbonation.

2006 vintage, draught. Pours clear gold with a slight orange tint, no head. Nose is musty, leather, earthy, barnyard, sour apple, with an underlying sharp citric note. Taste is soft, musty barnyard sourness, sour apple and leather, hint of citric bite. Mouthfeel is still, almost no carbonation, medium bodied.

750 ml at the brewery. Sorry, the museum. You need to like lambics to like this one. Head was limited to 3 bubbles. Musty nose with citrus. Medium body, acidic and sour. Grows on you. And maybe in you.
