Commercial Description:
A new brew concocted by Jean Van Roy to celebrate the 2003-2004 Division III title for the local Union St. Gilles football team and its upgrade to Division II.

Cuvee des Champions is not a traditional 'gueuze,' in that it is made from only two year-old 2001 lambic, not from a blend of older and younger lambics. It is also dry-hopped in the cask for three weeks with fresh Styrian Goldings hops. Re-fermentation in the bottle is achieved with the addition of a small amount of candi sugar.

Merritt Island Throwdown ’08: Bottle, courtesy mgumby10. Pours a hazy mango color, with creamy white highlights. Watery white head sits atop this gueze well. Nice sheets of lacing remain on the glass. Strength in the nose is the tartness, with a backbone of grapefruit and hops. Enjoying this combo. Big tartness flavor, with awesome barnyard qualities. Wheaty. The hops come in at the end, with a grapefruit finish. Easy as hell to drink, very well balanced. Hoppiness is refreshing in this one. Definitely liked the dry-hopping in this one.

Courtesy Mgumby10. Vintage 06. Pours a golden cloudy color. Aroma is mostly apple. Tastes of sour light fruits, with some funk yeast taste. Palate is refreshing with a sour kick. Thanks Mike.

Tasted at the February Northern California Beer Tasting. This lambic pours a deep yellow gold color. Large sized white foamy head. Aroma is lemon, sour, funk, must and a touch of sweetness. A medium bodied lambic. WOW. There is a lot of funk and a lot of sourness in this beer. Lively carbonation. It very very dry. Yet the acidity doesn’t seem that bad. Tart, maybe that’s the word for it, and then there is the funk. Nice beer. Mouthfeel is full and round. Finish is crisp and dry. Aftertaste is slightly bitter.

Bottled at Beer Circus, Brussels. Hazy golden with a white head. Really sour aroma; rubber mattress... Soft palate but still very sour. Prett bitter.

3rd Annual Woodshop Tasting, 3/1/08. Thanks Chris! Grapefruity, zesty lemon - tart forward. Good amount of lingering funk. Nice and drinkable - but powerful.

Rating # 1300. Bottle from Biercircus as Cuvee du 89’. Bottle 37,5cl - vintage 2004. Pours hazy orange with a fine egg white head. Sprinkly & fizzy but quite lasting. Aroma & taste is sour, fruity, vinegar, white wine - vinous, tart & wood. Like always very sour, fresh & dry. Amazing experience! Cant wait to visit Belgium & cantillon again!

Sampled 7-19-2007. I believe this is my first unblended lambic. Pours a brown hued orange. Nose is slightly like a certain flavor of Ricola throat drops. I can’t remember exactly what kind, but I think it was lemon and herbs or something like that. Antiseptic tone to it. Fair amount of wood is on there too. Flavor is sour indeed. Definite wood character to it. Just a pure mix of tart and wood. This is what a lambic is. Feel is as expected on the liquid and ripe with carbonation. Overall very drinkable. If you haven’t had a real lambic and don’t appreciate that sour funk, you won’t dig this one. This is a purists dream. Very much worth taking the bus to Philly for a day to get a hold of.

750ml bottled in 2006. Poured into a flute the color is a bright light melon orange. The carbonation isn’t very active and there is no head. Aroma is fruity sourness. There is some funkiness but it isn’t obvious. The flavor is smooth and well blended. Plenty of sourness, tart in the back of the throat. Fruity and very acidic. There is carbonation in the body, although the pour would never show it.
