Commercial Description:
A new brew concocted by Jean Van Roy to celebrate the 2003-2004 Division III title for the local Union St. Gilles football team and its upgrade to Division II.

Cuvee des Champions is not a traditional 'gueuze,' in that it is made from only two year-old 2001 lambic, not from a blend of older and younger lambics. It is also dry-hopped in the cask for three weeks with fresh Styrian Goldings hops. Re-fermentation in the bottle is achieved with the addition of a small amount of candi sugar.

Aroma is bold, sour, funky, barnyard and dirty rotten socks. Flavor is cheesy and rotten, dirty socks, moss and wood with some funky sourness. Bold and crazy cheesy.

Orange color, cloudy, and has a white colored head. The smell is is tart, sour, wood, fruits, and funk. The taste is sour, wood, acidic, tart, and funk. Nice.

Opaque apricot pour with a small but lively white head. Aroma is tart nectar fruits- apricot, apple, and pear, yielding some light barnyard funk, lemon, and an ever so subtle perfume hop character. Flavor begins with light fruity notes- tart apple and pear, and in its wake follows a massive funk profile. Dry hopping is noticable but definitely doesn’t act to steal the spotlight in anyway- a creative and well done touch. Farm yard, horse blanket, leather, and a huge tart character. Palate is quite effervescent, slippery, and dry with a lingering funk character that just wont go away. I am very impressed!

Pours a cloudy apricot with a small, bubbly white head. Aroma holds lots of tart citrus, some funk tied to light nectar fruit notes, rather than barnyard or hay. The impact of the dry hopping is also evident, with floral, perfume, and lemon aspects. Flavor starts with the same tart citrus and nectar notes, but near the middle of the taste the funk accelerandos into the forefront, with more horse blanket ideas than in the aroma. The finish holds an interesting effervescence, much like a champagne or even a kristallweizen, that may come from the re-fermentation. Palate is lively on the tongue, and, though tart, oh so drinkable. Another excellent lambic from Cantillon.

750, 08, capped and corked. thanks sprinkle! pours a cloudy medium gold with a dense and creamy white head. moderate lacing. big lemony nose with tart white vinegar behind that. creamy medium body. tangy lemony, minerally, mildly tart mid palate. mild tangy finish. this beer is a perfect balance of refreshment and complexity. delectable.

Bottle from WTF OMG tasting in tampa. This one pours a hazy golden yellow color topped by a thin, bubbly white head that quickly settles to a thin layer of bubbles. The aroma is full of sour apricots, oranges and lemon to go with some grapefruit, oak, and bretty funk. The flavor follows with more sour oranges and apricots to go with a good dose of lemons and grapefruit citrus. Really sour taste in this one. Some oak and funk come through as well along with a touch of lactic creaminess to smooth things out. Medium bodied with subtle carbonation that balances the tart, dry mouthfeel perfectly. Another great lambic from Cantillon.

2003-2004 Bottle consumed 10/1/09. from Hopdog. Thanks!! pours a deep orangish brown with a two finger white fluffy head. Aroma is subtle notes of lemon, bread and butter, wood, perfume, cereal, grass, herbs, mold, leather and horse blanket. Flavor is very pleasant lemony tartness, with some lemongrass, lime, etc. Really nice dry finish.

THIS beer Certainly is fucking awesome. The nose isn’t big and potent, but has many phases of subtle shit that transitions into different shit as warms this beer. Many dimensions to this one, is what I’m trying to say. like 10 or 26 or some odd dimensions. What I’m trying to say is that it would be quite difficult to find a theory or model that accurately portrays all of the small subtle and large exciting things going on at the same spacetime of this beer. Flavor is fucking tight too. boo ya ka sha

Draft: hazy straw color with a little white head, funky sour aroma and taste, mild carbonation, excellent beer.
