Commercial Description:
A new brew concocted by Jean Van Roy to celebrate the 2003-2004 Division III title for the local Union St. Gilles football team and its upgrade to Division II.

Cuvee des Champions is not a traditional 'gueuze,' in that it is made from only two year-old 2001 lambic, not from a blend of older and younger lambics. It is also dry-hopped in the cask for three weeks with fresh Styrian Goldings hops. Re-fermentation in the bottle is achieved with the addition of a small amount of candi sugar.

Bottle. A slight orange and musty pear fruitiness on the nose quickly fades into lemon zest tartness and the standard Cantillon funk. Pours cloudy peach with virtually no head. Flavor has some zesty pineapple at first with some mild funk notes chiming in later. More delicate and not as acidic as other Cantillons. Creamy on the tongue with a lot less bracing acidity and high carbonation than the normal house style. A most unique Cantillon.

From a bottle poured a hazy pinkish color with very little head. Nice tart flavor with a strong quick finish.

Garrafa.

listed as "Dernere Cuvee du Van ’89" at the bier circus, brussels. pours slightly hazed golden white head. nose is funky, lemony, and anti-septic. flavor is very dry, and a bit plan for cantillon, some oak, horse blanket, lemon, and slightly medicinal. mouth feel is fizzy and acidic. yes it’s crisp and refreshing but it’s bland and harsh. not one of cantillon’s better moments. I really think this beer is not Cuvee des Champions because it doesn’t taste anyting like it and the bottle i had was brewed for bier circus. i’ll have to investigate this. 2.8. Late June 09, 750ml bottle dated 1/08, pours hazy gold white head. nose of vanilla, oak, funk, white winey. flavors of vinegar, oaky, floral, phenolic, and very dry acidic finish. 3.8.

Bottle, at RBESG 2007 in Glasgow, Grand Tasting. Cloudy golden colour. Very nice lemony aroma, hints of oak and barnyard. Lemony and fairly dry flavour, refreshing and nice.

Bottle, RBESG Grand Tasting 07. Hazy golden, thin white head. Grapefruity citrus gueuze. Mouth is quite sharp citrus with some straw, sourness then kicks in. Finishes quite smooth, but with that grating hop on the way down, just to cheer you up. Excellent
