Poured a lightly hazy orangey-apricot with a half inch of white headage. Loved the funky/sweet/sour/tart nose... old moldy, cobwebby stable, bread, and mild spices accented with a lighter-than-expected apricot presence. Flavor was even better... lip puckering, stomach-eroding vinegar and lemon, funky yeast, ripe cheese, and overtones of apricot. Powerful in every sense of the word, yet intricately crafted, engaging, and truly refreshing. Rather dry. This was a most excellent brew! ThomasE (5178), Copenhagen, Denmark

Aroma was intense tarty sweet fruit and sour champaign. Flavor was similar...very much like white wine with some great light fruitiness and barn funk. Mouthfeel was light and refreshing. | 4 | Aroma | Appearance | Flavor | Palate | Overall | | 8/10 | 4/5 | 8/10 | 4/5 | 16/20 | May 27, 2006 Tap at Spuyten Duyvil’s yeast feast - probably one of the least sour of Cantillon’s lambics, but, as anyone experienced with them knows, that doesn’t mean it isn’t still mouth-puckering - cloudy burnt gold/orange - lovely wild yeast and white wine aroma, with just a small undercurrent of tart apricot - the sourness seems less like a wild yeast sourness, and more like they used under-ripe fruit to lend a different kind of tartness to this particular beer - woody, barnyard, characteristically Cantillon flavor abounds underneath - and under THAT, an almost alcoholic, tannic, wine-like flavor - very complex stuff, but even with the lower sourness, it’s still hard to drink more than a few ounces in a sitting. mullet (801), Melbourne, Australia

Well it certainly looks like an apricot beer (not that I can think of any other apricot beers I’ve had) - hazy orange with a sparse head. The first thing I noticed about this one was that the aroma didn’t make my mouth pucker up before even tasting it like most Cantillons do, which as it turned out was a harbinger of things to come. This was quite unlike most other Cantillons I’ve had. Distinct peppery lichen aroma with not much apricot character, though perhaps there’s some of the skins and an earthy stem character. The house lambic character does eventually come through, but remains restrained at all times with bits of wood, cobwebs, stale hops and aged cheddar peeking through. Whereas the aroma had only a subtle hint of apricot, the flavour is simply bursting with apricot character in the most delicious way. It tastes like tart, dry, apricot nectar with the acidity of dried apricots. The initial sensation is slightly milky, and perhaps even a touch alkaline, and the finish is very clean with a touch of pungent hop. Lambic character is minimal. It gives the impression that most of the acidity is generated by the fruit, not the lambic, and I like it. A lot. Delicious stuff, the best Cantillon I’ve had in quite a while. Moderate/high carbonation. Aroma is acidic,funky,musty,fruit,citrus. Flavor is citrus,acidic,tart,astringent with mild peaches. Fuller body than any lambic I had recently.
