Tasted at the 2006 Pizza Port Belgian Fest. This fruit lambic pours a light yellow very hazy gold color from a 750ml bottle. Medium sized white foamy head. Aroma is fruity, tart, sour and dry. Touch of apricots. A medium bodied lambic. Malts are fruity, with a prevalent apricot flavor. Intensly dry with a nearly mouth puckering tartness. Very dry, nearly Berliner Weiss in tartness. Still there is a strong malt and fruity backbone under all that tartness. Mouthfeel is full and round. Finish is clean, crisp and dry. Aftertaste is tart.

Initial aromas are all funk just as you’d expect from a Cantillon -- all the distinctive Cantillon aromas are there. Hazy straw/orange. Expected barnyard flavors. Wonderful palate -- perfectly medium-full with lively carbonation and a long finish. Then I let this breathe ... about half an hour into it (I had left some in a glass) it was like smelling and eating an apricot ... amazing. This is a great beer.
