The aroma is quite sweet yet very tart, notes of peaches, really dry. Hazy yellow body, with a small white head. Extreme sourness, followed by notes of grape fruit. Bone dry. Very minimal head and no lace. Aroma is very complex, yet it isnt all that inviting. Initially some fruit is noticed as you pop the cork, along with some woody notes, but when it is cool you can notice a lot of sour notes, mixing heavily with a lot of musty aromas as well as lots and lots of sulfur compounds. Some sulfur dioxide, and a bunch of different thiols I cant pinpoint. Some of the aromas are very similar to those found in a fermenting lager, or those that come from weihenstephan yeast with respect to the sulfur. As it warms more and more sour and musty barnyard smells come up along with a hint of fruit- apricot-peach like. Dear lord this is some sour stuff. First sip is like tasting a sour warhead- maybe even more sour. This is really mouthpuckering yet I cant seem to stop tasting it. Lots of sour notes up front with lactobacillus, then a bit of the fruit in the end. I expected a lot more fruit in this lambic- but only got a minimal amount. Obviously this is very dry due to its acidity. Not sure If I will be able to drink this whole bottle by myself, but it is so unique that Ill give it a try. I got really lucky with this bottle being that it only cost me $11 in brooklyn (obviously a mismarked bottle) instead of the usual $20-25 per bottle. Wohlfs brought up "perm solution" which I will have to agree with. Flavor is a very nice sour/tart balance with only a hint of apricot. Weird, funky yeast aroma: lemon, custard, and other such things. Flavor is musty, texture is thick, with some yeast funk going on that is killer. Very musty, aged, lactic and of course sour. Acid, tart aroma of apricot, typical Cantillon wildness. Acid, tart and mouthpuckering flavor of apricot, again this reeks of Cantillon a lot, their wild yeast signature is there, there’s a good dose of funk and it’s also citric. The mouthfeel is dusty and dry. Great beer.
