Why did it take me so long to try this beer? Ive seen it available at Churchills (pubs are expensive places to try expensive beers), now its gone. Then Ryan had it at his Cantillon tasting, but \i left too early. Then Ive seen it here or there. Well I finally found a 2008 375mL bottle at Tanakaya in Tokyo and bought a bottle. Chilled in the fridge and poured into a large snifter. Beautiful cloudy orange amber color. Aroma...aroma..cough...well, ahem. After brewing 7 sours and noticing my own mistakes, and loving Cantillon for years, Im starting to notice some undesirable (to me at least) aromas in Cantillon beers. Of course there is the initial wonderful sour aroma, with a hint of acetic acid, which I like. Apricots are very difficult to discern in taste or aroma, but probably you can see it in the color. Next in full force in the aroma is a vegetal skunky aroma. Ive smelled in my ciders and one of my Berliner Weisses. Very remiscent of the garlic of Saaz hops, but it could be remnants of enterobacter production of DMS, though I would hope this would fade after the 1-2 years of barrel aging. It could be something related to aged hops. Whatever. Even though Im trying hard to avoid the DMS aroma in my sours (and I never notice it in American sours), Foufoune is still very good. Dryness amplifies the sourness like a young tart peach. Easy to drink. If money were no issue, I buy more, but since money is an issue, Ill stick to brewing more sours at home. Yum.

Bouteille de 750 ml, chez David et Catherine. Merci Denis ! Arômes de lambic avec une touche d’abricots. Robe saumon et trouble, effervescence assez faible et peu de mousse. Très intense en bouche, on retrouve des notes de pommes vertes, les abricots, une touche de blé et la signature caractéristique du lambic. Finale très sûre (lactique et citrique) et très longue. Une très bonne bière, mais tellement sûre qu’elle doit être bue tranquillement et en petites quantités.

Bottle. Poured clear orange golden color with minimal fizzy white head that diminished slowly with fair lacing. Good tart apricot & yeasty aroma. Medium to full body with tingly sticky texture and soft carbonation. Moderate to heavy funky fruit flavor with a solid tart fruit and small alcohol bite finish of moderate to long duration. This is a standout lambic.

Sampled this on tap at Capone’s recently. Pours a cloudy pale golden yellow color with light golden orange hues when held to a light source and a one finger creamy white head that slowly receeds into a lasting ring that leaves traces of spotty lacing behind. Slightly earthy barnyard funk aroma with lots of earthy oaky tannis, cobwebs, horseblanket and light lactic creaminess. Hints of honey and crisp light fruit, especially apricot as well as some apple and pear. Very funky intense mouth puckering funkiness up front that slowly mellows out mid palate into a nice crisp lactic funky sweet tart feel. Perfect bone dry sweetart finish that leaves me salivating for another sip. Funky tart sweetness with a nice touch of oaky tannis that is prominent up front but mellows toward the end of the swallow letting the lactic cremainess and light fruit notes shine through. Perfectly balanced and insanely drinkable once you get over the initial pucker shock. Lots of apricot as well as other light golden fruit, mostly apple and pear. Puckering dry finish but not acidic. Pretty much perfrect. Highly recommended. One of the best Cantillons I’ve had.

On draft at Capones. Pours a cloudy yellow honey with a small frosty white head. Aroma of funk, sourness, light peach and apricot. Taste of light peach, apricot, funk and sourness.

On tap at Capone’s in 2009 from a 2008 keg. From a snifter. Smells of light funk, and fruit. A light orange color with little to no head. Tastes sour up front with a very light apricots. Sourness is not overpowering and very, very smooth when combined with the sweetness of the apricots. A great sour which I would happily drink again.

Tap at Capones . 2008 keg. Pours a hazy golden orange with a smaller bubbly white head. Aroma of peaches and apricot, sourness and funk is there but restrained. Flavor of the same apricot and peach. I like how the sourness matched up with the fruit in this one.

There are excellent floral and citrus notes in this ’08 tap at capones. The translucent honey colors have a noticably bubbly appearance. The tart flavor is smooth with a rich gueze like flavor that settles beautifully.

Pours cloudy orange with a white head. The aroma is very tart with apricots showing through well. There is sharp citric acid, wild yeastiness, crispness yet smooth. Medium / light body that’s very crisp and has flowing prickly carbonation. The flavor starts with dried apricots, citric acid, lemoniness, spice and funky grainy bugs. The finish is sour and tart with less apricot and lots of lingering citrus and funky bugs. A great lambic.
