Lovely clear amber color with a medium, bubbly head, which lasted longer than expected. Aroma of citrus, lemon, a bit of barnyard, some lactic aspect,
Very dry and quite sour. Creamy, lemony, but crisp and clean. Very nice. Fruitiness is subdued compared to the dusty dryness, though it got a bit more estery after the yeast was added. A bit of funk, and a long bitter finish containing a bit of lemon peel. Very straightforward gauze, dry as a bone, perfect mouthfeel, amazing with some ripe cheese and other foods. Nose is funky, earthy, sour, don’t really know what, maybe some vinegar. Would propably need to re-rate for better characteristics. Flavor is sour for sure, but not citric sour and is actually quite easy to drink. There’s no vinegar qualities in flavor and mostly just earthy, a bit yeasty and surprisingly neutral, flat flavor. Think of your basic white bread with nothing on it. A bit empty, but not bad by any means. I’m curious for more.
