Commercial Description:
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

blurry orange, yellowish head. aroma is mostly sour and lemony, but there is some fruityness and flowers at the end. also some horse. flavor is more delicate than normal, sour without being vinegar-y, and bright and fruity. very dry. thin-medium body and medium carbonation. very long bitter-sour-sweet finish. very nice.

2004 Vintage. Deep orange pour, smells intensely funky and just a touch of hops, really a great nose. Taste was upfront barnyard, white wine vinegar and maybe a little spoiled lemon. A lot going on here in the forefront. Really tart sourness middle to finish, no lingering aftertaste, just a tingling. Really nice beer.

Bottle, 2006 vintage. Thanks to BDR for sharing. Pours a cloudy yellow-orange body with thin, white head. Aroma of sour and tart fruit and funk. Flavor is more tart lemon/citrus and grapes with a hint of citrus and floral hops. Tart finish.

2006 Bottle @ A la Becasse. Pours gold with white head. Aroma of slight piney hops and funk. I kind of like the melding of these two seemingly contradictory aromas. Taste was typical Cantillon funkiness mixed with some lemons, along with a nice floral element that I couldn’t place. Sour finish, but not much lingering. A good change of pace!

The bottle looks great, the beer in the glass is okay. Starts very sourish, also bitter. Woody notes, also a bit earthy. Finish a bit milder. Good beer! Thanks to HenrikSoegaard for the bottle!

(2006 Vintage) Nice aroma with big tart notes, a bit of funk, and a touch of grape. Pours a clear amber, with a quickly fading fluffy white head. Amazingly tart flavor, with just a bit of citrus hops poking up in the finish. Very tasty, if you are a fan of sours and funk.

Bottle has a cap and a corck, mine says 6% not 5%. Pours a hazy amber with a light tan head. Aroma are hoppy and sour fruits and oak. Flavors are very sour and bitter, with young grapes and a little lemon finish. You can definitly taste the oak finish in it. I feel the wild very sour kick a bit strong, sometimes you love it sometimes you hate it.

Brewed 2006, bottled Jan 9, 2009 - bottle from La Becasse in Brussels - Pours orange with a small head that laces well. There’s big lambic yeast in the aroma with a hint of tart dark fruit in the background. It tastes strongly of wild yeast, very definitely a Cantillon. It’s tart, bitter, and very dry, and it works. Cantillon - You have been funkified!
