Commercial Description:
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

Beautiful beautiful beer! Notes from a tasting a few months back. 2005 vintage tasted along 2007 This is very good aged! Pours a hazy gold Funky aroma with a light fruitiness, good hoppy to sour ratio on the flavor that is surprisingly plesant both flavors are very under control and do not overwhelm eachother, the funiness certinally takes over the hoppiness in the older vintage. There is a bit of citrus here and the flavor reminds me of a reisling.

Bottle. Damn why don’t I like these. This came from Atlanta...and its another Cantillon tht I just cannot appreciate. Hell it would make a better salad dressing than a beer...sorry sourheads...dont hate....damn.

750 ml bottle opened at PP Strong Ale after hours. Light orange pour with bleach white head. Good carbonation with a pretty strong nose of funk and lemon. Very tart mouthfeel that almost feels like it sucks the moisture off your tongue. Flavor of fresh lemon juice, grapefruit, barnyardish funk, and a hint of honey at the end. Pretty damn good brew.

2005 vintage. Smell is fruity, barnyard, sour, typical lambic like. Organge color and hazy in look with a large foamy white head. Medium body and ultra dry. Good stuff. Taste is sour, fruit, wild yeast, acidic, and carbonation.

Capped and corked 0.375 l bottle my neighbor Zrinka brought from Brussels, thanks! 2006 vintage. Finally got my hands to an unblended lambic. It poured murky amber/orange body with medium sized head. Nice vinous aroma, seems so simple, but shows slight fruitness like citrus fruits and peaches. Sour flavor for sure, relatively complex with yeast being prominent, some fruitness again - peaches, white grapes. Also you can feel notes of oak barrels. Full body with for lambics usual, full carbonation accents fine acidity in the finish and makes it long. At the very end becomes rounded with malts and/or yeast. I pretty like it, but although I respect its complexity and quality, it’s a bit too wild for my taste and I had better lambics.

Capped and corked 750 mL bottle shared by Alraomon with myself and cdumler, who still doesn’t appreciate sour beers. Alas. 2005 vintage. Rust on the the cap. Pours a hazy bronze color with a large head. Good head retention and lacing. Very funky aroma of cheese, barnyard, pear and pepper. Veyr dry. The taste is also very dry and tart with notes of green olive, grape, grapefruit and funk. Spritzy, soft carbonation, syrupy mouthfeel, full bodied.

2004 bottle. Mmmmm....feet and lemon juice. Hazy blond. Lemon rind in the distance, not up front. Past it’s prime, the store I bought it from had it out of refrigeration, just sat it on a shelf. Still good. but not the monumental experience I first had with a 2004 bottle a year ago.

750 ml corked and capped green bottle 2002 bottling poured a clear copper with a small lasting amber head. Aromas of sour citrus, straw, barnyard and light leather. Palate was light bodied, crisp and tart with a dry finish. Flavors of grapefruit, lemon, straw, leather and light barnyard with a crisp dry lingering tart finish.
