Commercial Description:
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

Bu au Post-Mondial 07. Blonde dorée brumeuse, petit collet. Arome d’houblon épicé, surtout gingembre. Goût d’houblon doux, agrume très sûrette et pétillant.

I had this one on draft at Brouwers Belgian Beer Month in Seattle. Appearance was a cloudy yellow/orange and had an average head at first pour. Flavor was sour, like grapefruits, acid, citrus. Its smell was floral, mild hoppiness. I also liked how it lingered in my mouth.

2004 bottle. Pours orange with a fast fading white head. The acidity and sourness are there, but seem more muted in this one, maybe it was the few years of aging that mellowed them, but then again i’ve had cantillon beers that are much older that didn’t seem muted. Light citrus and woody flavor to the finish.

Édition 2004. Robe orange claire surmontée d’une mousse blanche qui s’estompe. Arômes de poussières, d’oranges sucrées et de houblon. Saveurs acides d’oranges amères, de malt et de houblon amérisant.

Bottle (2003) at Ølbaren. Cloudy orange - white head. Vinegar, berries, wood, fu, sour, acid, earth, dirt, light horsey. Rather smooth and pleasant !!

Another milestone in two ways. With thisone I’ve also rated all the 71 different Beer Styles. So this Lambic - Unblended I’ve reserved for this rating in Sweden after a nice long day on bike. Sweaty I swallowed it with pleasure, more than expected. Hazy light brown look with good great, but dissapearing head. Notes of wild yeast, grapes, acid, grass, wood, flowers and more. High drinkability!

Bottle, 375 ml. Cloude orange/amber, almost no head. Fruity malt aroma with cidery notes of grape and red apples. Along with this, there are strains of wet wool and leather, and some wood. medium bodied with soft but lively carbonation. Flavour has a little to sharp acidity, with a pungent bitterness.

Pours a slightly hazed orange with a very small fizzy head. Aroma of rotting grapefruit, chemical and wet redgum... better than it sounds. Flavour is well balanced, quite bitter and moderately sour, grapefruit comes through with some other tangy notes and a balanced maltiness and floral hoppiness. Clean, acidic finish. Very wonderful.
