Commercial Description:
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

Pours amber with orange highlights. Minimal lacing with quickly dissipating head/ Musty (or dusty) on the nose with notes of sweet and sour fruit developing. Slightly maritime (brine?) with some underlying floral tones. Very lively and crisp on the palate. Slightly spicy but turning creamy midpalate. Flavor developing everywhere. Notes of sour malt, becoming increasingly sour as it develops. White pepper, oak, olive brine. Incredibly complex flavors. Finishes malty, sour, long and very complex. Wow. A truly amazing beer. near perfection in its style.

Hazy yellow with orange shades and good white head. Good solid bitterness from the hops and nice sour taste. Fine high acidity.

Bottle given by Beermouth. One of the best lambic the hint of hop bitterness, just is fantastick. The head just makes it nice to look at.

A very nice middle of the ground, mild mannered and unblended lambic. Pours a golden copper with a lasting foamy-like head. Aroma is tart, acidic, and citrusy, with a hint of lambic mustiness. Flavor is a bit one dimensional, driven by tart citrus fruits and white grapes. The fresh hop bittenress shows up in the finish, which is also quite acidic. A very nice and easy-drinking lambic.

When comparing this side by side with the Bruoscella, reaction to the Iris was "yeah, that’s what a lambic should be!" Really preferred the Iris. Looks like a lambic, hazy gold, good head. Nose is subdued, which is the best one can hope for in a lambic. Sour, funky, not foul. Taste is sour, intense, slightly pissy, long finish, and more detectable hops than usual in a lambic. Worked quite well.

750 ML Bottle of 2004: Minuscule fizzy head and hazy golden (slight orange) body. Distinct hop and yeast presence. Bitter. Very sour. Non-sweet. Very appeasing and quenching and brought to mind a happy paint thinner olfactory. One of a kind beer. Reminded me of fresh cedar planks.

My friend said this was the best Cantillon beer, but i thought the others were much better. Hmmm. Tried at the 12 Hour Belgian Beer Party in Carlsbad, CA. Possibly the best beer tasting ever, with 70 bottled and 20 draft beers.

2004 bottle. Pours a cloudy orange with a very thin white ring of bubbles. Smells of intense sugary sourness, lemons, loads of wild farmhouse funk (but none of teh offputting odd aromas normally associated with their lambics). Lots of grassy hay hints are also there. Tastes of almost over the top tarte lemon, residual sugar is pretty much non-existant. Mouthfeel is light but in a quaffable way. Finish yields hints of bitterness. Not a whole lot going on here beyond the tartness. On the plus side, this is very sessionable. I could see mysef drinking this regularly in the summer if it were a bit cheaper.
