Commercial Description:
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

Sampled at Columbus tasting. Poured murky light orange. Tasted like sour cheese to me! Very strange brew indeed, although, not nearly as bad as I was expecting!

Well after rating number 2000 I guess the Columbus crew felt I should finally complete my styles so Sliffy and Puddintane and Beervirgin72 all brought a bottle of this - Thanks! - Pours cloudy amber with a slight white head. Aromas of swiss cheese, hay, and some grass. Flavor is cheese, sourness, a little candi sugar, and a touch of oak. Acidic and sour on the palate with a dry finish.

Bottle. Pours cloudy dark orange with a small fizzy white lasting head, spare lacing though. Aroma is heavy malt (hay, straw), average hops (flowers, grass), heavy yeast (earth, musty, leaves) with notes of cask and wood. Medium bodied, oily texture, soft carbonation and an astringent finish. Average duration, light acidity, moderate acidity and heavy bitterness. Damn, Cantillon makes a TRUE Lambic.

Bottle was 2004 yet didnt hold up with time at all. Guess this had to be drank fresh off the shelf? I also paid a hefty price of eighteen dollars if you could believe it or not. Flavor is almost all gone and is more of a flat yet fizzy liquid extremely tart with sourness and biterness. Im not sure if this is how an unblendid lambic is supposed to be but im not a fan of it if it is. Then again could be a bottle not taken care of by the liquor store owners. Appears to be crystal clear with no dust specs or anything seen floating and the head is a firm patch of foam. Aroma does have a hint of a white rose or flower filled with pollen.

2003 vintage, bottled in 2004 according to the cork. Hazy golden, big head that reduced to medium, fine bubbles. Definite lambik aroma with hints of wood and cheese. Tart fruity flavours, good bitterness ending with a very dry, woody finish. A truly great complex beer

Vintage 2003. It’s a fantastic orange golden and slightly hazy color and a nice, creamy head. The cork tells me that this one was bottled in 2002, and now it’s November 2006. The aroma and flavour is acidic, not just acidic, extremely much so!! I do get notes of fruit too, but the acidity leads me to believe that it takes a much more hardcore lambic lover to cherish this one, than I am. 1704

750ml - 2003 - thanks MrWalker - Happy New Year 2007! - Aroma is sour lemon, horse blanket, hay, yeast and dust. Pours transparent orange-brown with a big head and good lacing. Flavor matches aroma with more malt to balance it out. Bit of incense in the aftertaste. Palate is tart and smooth. A bit thin but still very flavorfull and tasty.

Vintage 2003. Orange amber hazy colour with a small white head. Fruity herby little sour and yeasty aroma. Full body, little sour. Finish is herby and fruity with a distinctive bitter-sour touch. Little tart as well. Very special and strange beer, but rather good anyway.
