Commercial Description:
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

Bottle, Vintage 2004. Pours cloudy golden orange, with a white head. Aroma is yeast, spices, fruit, and funk. Flavors are lemons, hops, yeast, spices, other fruit, and a bit of funk.

Vintage 2004 bottle from my secret santa. Thanks, I love cantillons. Pour is cloudy, hazy orange with small head that fades in seconds. Lots of carbonation, initially. Nose is tart and hoppy funk. A much chewier and deeper body than any cantillon I have had to date. Flavor is barnyard funk with spicey chewy hops. A unique Cantillon.

Bottle. Unblended lambic. Haxy yellow colour with a big bubbly white head. Quite hoppy and very sour vinegar aroma with some sweetness. Flavour is sweet, then sour, very sour, and then dry. Quite a sour mouthfeel. A VERY different beer! One a real beer lover must try, no matter what.

Bottle: Gold, nice white head, light lacing. Nose of tart fruit, clean malts and a full bouqet of bacterium and yeast. The flavor is nicely tart and a sweet funky anise malt notes. Nice finish, not as tart as I’d expect.

Bottle that was a bit pricy but you have to cough up the dough for beers like this. Pours a nice peachy yellow. With a white frothy head, lacing was very thick. Smells a bit oaky, herby, and yeasty. Taste a bit sour with the taste of melon, lime, grapefruit, and peach. Not as dry as i imagined but the tart taste is relaxing.

Nose is sour and nicely barnyard like with other notes of sharp Vermont cheddar. Bottle slightly bubbled once cap was removed – cork was a bit sticky. Body is an orange to salmon color accompanied by a Nilla wafer colored head. No lace. Flavors include yeast, barnyard, cheddar and must. Sour mouth-feel, dry and lovely. In memory of Wilson, may God give him a Lambic tonight.

Aroma is very sour.Pours cloudy yellow with a white head.Flavor is the same as the aroma,very sour.Mouthfeel is thin to medium with a sour finish.

Re-rating at home, July 2007. 2003 bottle. Dark golden, with a small head. Citrus nose with grapefruit, lemon, some grass. Tart and with a hint of hop bitterness, unless that’s my imagination. Quite a malty lambic, with a good body. Tart and tasty finish and aftertaste. Dec. 08 rating, 2003 bottle again: Oddly, very, very floral. I taste iris now... The cantillon character lays the ground, with hops definitely there, and malty sweetness, and it all comes together in something not unlike iris or daffodil.
