Commercial Description:
The Cantillon brewery is closely linked to Brussels, a city which has the iris as its symbol. As the name indicates, the "marsh iris" is a plant growing in humid areas. The historical center of Brussels is built on swamps where this flower used to grow abundantly.
In 1998, the Brussels Museum of the Gueuze celebrated its 20th anniversary. The Cantillon brewery decided to make a new spontaneous fermentation beer for this occasion, named after this symbolic flower.
It is a completely original beer which, contrary to the other products of the Brewery, is not brewed with 35% of wheat. The Iris, which is only made with malt of the pale ale type (giving a more amber colour to the beer) conserves the typical flavour of the spontaneous fermentation, the complex aromas and the vinous taste.
The hopping is different too. Lambic is made with 100% dried hops, for the Iris we use 50% of dried hops and 50% of fresh hops. The latter cause a superb acidity, the former, due to their tannins, enable to conserve the beer while preserving all its qualities.
After two years in the barrel, the Iris undergoes a second fresh hopping two weeks before the bottling. A linen bag, filled with hops, is soaked in the beer for two weeks. This technique, called "cold hopping", gives the beer a more intense savour and makes the smell and the taste more bitter.

Bottle. Orangey and yellow pour, small amount of white film / head. Aroma is some wet wood, light funk, sour fruit. Flavor is the same, not as repulsive as the last cantillon that I had.

‘04-750ml bottle @Pauls Gathering-pours a white head and cloudy yellow color. Aroma is barn/funky, light malt, sour. Taste is very tart, barn/funky, light malt, sour lemon.

Bottle, with a million thanks to Mike! Poured a lovely medium yellow, with a pillowy white head, and lovely lacing. The nose is the classic sourness you expect from a Cantillon, with brett, sour apples, and delicate dried stonefruit aromas, plus yeasty bread, and the fresh hops make a very noticable, and pleasant addition to the nose. The palate is classic, very tasty, with the added spiciness of the hops. I can’t wait to try this again.

Bottle. 2003 vintage. Mainly a matter of trying the style, because this sour thing just isn´t me. The beer looks beautiful golden amber with a medium bobbling head. Aroma sour and some yeast. Taste tart, sour some dry grapes.

On tap at Capone’s, a 2004 vintage. Huge sour, earthy, funky aroma. The flavor is very sour with some floral, funk, and mineral components. Very dry and refreshing. Excellent stuff.

05 Bottle. Poured a lightly hazy , yet vibrant yellow-orange color with an inch thick white head that slowly receded and left a few light spots of lacing. Tart aroma with hints of barnyard funkiness including manure and hay, some leather, light wheat, and sour apple. Crisp, tart entry with hints of sour apple and vinegar transition into a funky barnyard earthiness with hints of hay and wheat mingling along with light notes of leather and manure that give way to a lightly floral, dry hoppy finish that lingers along with some fruity undertones. Moderate carbonation and delicate, crisp mouth feel. Overall, an interesting lambic that seemed a bit brash at first, but as it warmed the flavors seemed to fall into place and create a different, enjoyable beer.

Bottle split with Dallas. Pours a bright, hazy orange body with one finger of white head. Aroma is strong tart, some sort of flowery scent as well. The taste is sour, tart, a slight sweetness towards the end. Awesome lambic.

Pours a hazy honey gold with frothy head. Beautiful nose. Smells of flowers and a distinctly tart smell that would put jolly pumpkin to shame. Taste is sweet and hoppy with an immense tart flavor. Very wet taste like a farmhouse. Finishes tart, puckering the taste buds.

Tap at Capones. Pours a hazy orange with a medium creamy off white head. Aroma of sour and vinegar notes and tart cherries. Flavor of tart cherries, apples, lighty sour and funky.
