Pours slight hazy/cloudy and golden orange with a huge, bubbly and white head - slowly diminishing. Aroma is tart barnyard, light winegrape fruity. Bitter and light acidic flavoured, vague sweetness beneath. Subdued malt note and a mild dry brett to tart pedicoccus acdity into the finish. Smooth fruity and tart far finish. Classic Cantillon character, sour, lots of yeast. Some acid. No carbonation really. What stands out about this beer is how mild it is, surely the least sour Cantillon I have ever had. (Thanks--whoever it was!) Copper, no head. Cinnamon, lemon, wool, mineral--very funky but such a fresh aroma! Vast tart waves, coating the mouth, puckering. But the sourness has a focus and intentionality to it that is very engaging. Leather, cinnamon, wool. Incredably refreshing.
