Commercial Description:
Please note the age of the sample you are reviewing when entering your rating. While many factors determine whether you have had "Jonge" or "Oude" Lambik, a general rule of thumb is to enter 1 year-old or older lambik under "Cantillon Oude Lambik" and anything less than 6 months-old under "Cantillon Jonge Lambik".

For those between 6 and 12 months of age, you should take in to consideration the character of the lambik. Samples presenting themselves as hazy/cloudy, with some head-formation and residual sugar should be entered as "Jonge Lambik", while those that are drier, higher in clarity and with little/no head formation should be entered as "Oude Lambik". If in doubt, message JorisPPattyn.

Sampled at the brewery. Hazy golden and orange in colour. Nice tartness with notes of honey, citrus, wood, earth, barnyard and still very refreshing.

Weekend of Spontaneous Fermentation 07. Slightly cloudy gold. Nose is meaty honey, some bright fruit, very woody. Flavor is bitter honey, lemon, very musty & clay like. Bitter finish.

Draught. Hazy orange colour, minor head. Aroma is smooth wood. Flavour is wood,some sourness and slight notes of sweet grass. A very "smooth" lambic by Cantillon. Was one of my favourite lambics tested at the weekend of spontaneous fermentation.

A Mes rate: Draught from December 2006 apparently. One of the best young lambics I have had. Smells very young and has an unbrewed malt hint to it. Very wheaty and has a smell that is incredibly similar to the brewery itself. Quiet amazingly so. Extremely strong malt for a lambic. Very unusual for a lambic so young. Yum!

Draught at weekend of spontanious fermentation. Hazy amber coloured with no head. Fruity aroma of wheat and wood with light acidic anotes. Light acidic flavour of wood and fruits. Tart finish.

Draught @ 16th Weekend of Spontaneous Fermentation 2007, Optal. Hazy orange color with virtually none head. Aroma is fruity, spices, wood. Flavor is moderate sweet and acidic (fruit sweet) with a average duration. Body is light to medium, texture is watery, carbonation is flat to soft.

Cask at GBBF 2005: aroma is earthy, burnyard hay and grapefruit. acidic mouthfill but not too much. The flavor is very sour almost and bone dry, lemony with grapefruit peels bitterness, a bit woody as well, refreshing and rich at the same time. A very good straightforward none complex lambic but not for beginners, it might be too dry and too sour for them.
