| 3.2 | Aroma | Appearance | Flavor | Palate | Overall | | 6/10 | 4/5 | 7/10 | 4/5 | 11/20 | Nov 20, 2007 2006 bottle. pours a hazy rose-red with a bit of a brown tint, with a moderate very slightly pink colored rose head that quickly fades to a film. smell is funky, with oak and cherries playing in a spicy and yet musty barnyard. hint of the sort of vegetables you might find in a red italian soup. quite complex and more enjoyable than in the various funky beers i’ve had in the past. i think that hint of cherries makes it. taste is sharp warm vegetable funk, with just he tiniest hint of cherries. i’m not sure i like it. the finish is great: very tart, tiny sweet with pretty big sour, even a hint of salt. medium to light bodied, but a bit sticky, with a ton of tiny bubbles. i really like the finish. the rest of the beer isn’t quite for me yet, though. Great reddish orange color with no head at all. Aroma of sour, sour, sour and sour. Some cherries as well. Love it. Aroma of funk, horse blanket, sour cherries, musty and yes everything you would expect from a Cantillon.
