Nicely-balanced and lightly fruity body.
Sampled at the RBSG ‘05 bottle tasting courtesy of Goldorak: Pours a hazy dark golden with a thin white head. Aroma is dry, tart and barnyardy with some earthiness. Body starts with a faint hint of sweetness, turning more dry, tart, cheesy and puckering toward the finish. Somewhat balanced brew with lots of tartness and mild complexity, yet enjoyable and refreshing. ¾ (4999), Colorado, USA

Golden murky color, extremely spicy nose, almost burning the eyes as I’m trying to sniff this one, like standing over a chopped onion. Full of lemon, ginger and farmhouse-esque burlap flavors, and also very smooth, even if it is acidic. Bitter but not a palate killer, buttery perhaps at times, but no that bad. A lot of lemon, grapefruit and strong peaches, oily and smooth texture. Another awesome Cantillon lambic.

Nose is hugely dry and full of cobwebs, with a massive barnyard, acidic, funky, dry, parches note... downright amazing aroma, so well held togethor.... Flavor is syrupy, prickly and massively sour up front, but has some greeness and some freshness still after all of this time. Acidic for sure but still quite calm, and overall very complex and deep. The finish is amazingly prickly and long-lasting, coating the mouth with a wonderfully rich and full presence, and an abundance of dry, cobweb-covered horseblanket, amazingly dry. This was had at cellar temperature and it’s just amazing how the body holds tight so well, unlike some of the more recent American attempts at lambic or sour ale. Truly a gem.

The taste is tart and citrusy with a bit of old hay, barnyard funkiness. It’s got a long dry finish. Not bad.
