the aroma had a slight vinegar, very winey quaility. it poured a cloudy apricot with a slight head that stuck to the side of the glass. less sour than many lambics, with a hint of fruit in all the mustiness. it drinks slightly oily. not a delight, but not offensive.

Bottled in ’98 (on cork). Flat quality gives it a very wine-like consistency, though I was surprised that there was a still a good fluff of head. Hazy, peach/yellow color. An aroma of wood, ammonia, cellared fruit, and craziness. The flavor is more musty, not extremely sour or acidic until getting into the bottom of the bottle. The finish is puckering on the outer edges of the tongue in a bitter/astringent way. Nice, but I don’t think this rocks all Cantillons.

Soury fermented light fruit, citrus, and flowers on the nose... and the same on the palate, this beer poured a pale orange color w/ thin head and lacing. The mouthfeel was light and carbonated.

Lightly hazed golden color with a taller rich looking off white head. Relaxed aromas of musty apples, light clove, floral hopsacks and old cherry lumber. What a sublime feel. Lightly oily with a hint of zip. Easily one of the easiest drinking Cantillon’s. I can envision myself much like the picture on the label. Hit the hammock and just enjoy. Actually the wife just came home and said I would look just like the picture on the label -albeit the nose is just a touch too big. Flavors of mild malt, with long and lightly sour finish. Soft and sweet with a linger of malt and white grapes. Wish my mistakes turn out like this.

Rich golden hue with a small fizzy but lasting head and okay lace. The aroma has notes of horseblanket and ripen cheese, sour apple and some orange zest, and a hint of oak. The taste starts twangy and lightly citric, more akin to Lindemans that a Cantillion. Not as puckery aka sour as most of their offerings. Because of that, this Gueuze is a bit more approachable than the Cantillion Lou Pepe but also lacks the depth of said beer. The finish is bone dry and lingering brett all over the place. The feel is mundane, not much else to say. Overall, an enjoyable taste but seems to have missed that something the great Guezes have.

Pours with an orange-gold body topped by a thin to medium thick head with some lacing. The aroma is sour, tart and full of horseblanket, so good. The flavor is similar and the tartness diappears quickly. Light, crisp and dry.

Pours a hazy yellow hue with a small light head. Aromas of grains, yeasty funk, citrus and that barnyrd goodness. Flavors of the same with a wonderful to it. Aged gracefully and thank you Dr. Bill for sharing.

Dr. Bill tasting, Toronado, Feb 2005. Head is mostly diminishing. Body is hazy medium yellow, bottle conditioned(?). Aroma is lightly malty (toasted grain), lightly yeasty (barnyard, cobwebs), with notes of lemon, cask wood, and sour apple. Flavor is moderately sweet, heavily acidic. Finish is lightly sweet, heavily acidic, lightly bitter. Light to medium body, watery texture, lively carbonation. Enjoyable, but didn’t really excite me too much.
