Nose is fruity lemon sourness - citrus, earthy & far more Cantillon-esque than many other Cantillons we’ve had today. Flavor is very tart lemon, wood, citric acid. Slightly hazy orange with a medium white head that disappears rather fast. Barnyard aroma with citrus, other fruits and wood. Nice dry sour flavor with a lot of citrus - lemon, a bit of grapefruit and maybe some other fruits as well. I also sense some sweetish undertones. Medium-bodied. Aroma is musty, light yeasty funk, notes of straw and dried grass. (7+) Flavour ranges from light refreshing sourness up front that builds as a wave across the tongue crashing into a full blown tsunami of mouth puckering Cantillon sourness when it reaches the back of the mouth. Minor notes of lemon seeds, very muted fruit acidity that becomes more noticeable as you drink through the bottle and become acclimatized to the sourness. (Nirvana just came over the stereo... hmmm) Fairly still, average palate seems fairly standard for lambics. Its no Girardin Black Label, but its rather nice. Tons of sour grapes and lemon up front. Big woody/corkiness in the background. Flavor much the same. Quick sour hit, gets taken over by the cork/woodiness. Smells of dry malt, some of the familiar sourness, lots of refined beautiful wild qualities. Taste was out of this world dry with a great tartness. Nice funky, sour aroma with hints of grapes, citrus, cork and wet leather. Flavor was tart and acidic, but not overly so. Horseblanket, sour grapes, lemons, light honey and a bit of grassiness.
