Commercial Description:
The Lou Pepe Gueuze is a blend of three different 2-year-old lambics. The standard Cantillon Gueuze is a blend of 1,2, and 3-year-olds. The inclusion of the younger lambic (which still has some unfermented sugars in it) sparks a refermentation in the bottle that gives Gueuze its famous champagne-like spritziness. The simple idea behind the special Lou Pepe blend is that it should have much more of the taste of old lambic, which is of course much harder, drier, more sour, and more complex than the young stuff. (Though 3-year-olds are generally more complex than 2-year-olds, it's not necessarily so; the 2-year-olds used in this instance have as much character as most 3-year-olds.) This being Gueuze, it has to be spritzy, so the brewery opted for the same method used in conditioning champagne: everyday refined sugar is dissolved in water and added to cause a refermentation. The sugar ferments out completely, so there is no residual sweetness, which Jean-Pierre famously detests.

Golden of color with a beige head. A dry aroma of sour wood and notes of sweets. A flavor with sweet notes and wood - dry.

2004. Very light, hazy, golden-straw body with a clean, effervescent, white head. Barny, hay-like aromas with notes of honeysuckle, peach skins, and vanilla. Remarkably clean, dry flavor, notably sour, but not acerbic. Has pleasant vinous, pear, and wheat characters plus mild woody tannins. Some pleasant microbial qualities, but very much like a quality champagne in terms of overall flavor profile and palate. Paired extremely well with some nice aged gouda.

(Vintage 2004) Wonderful tart aroma, hints of apple, and just a touch of basement aromas noticeable if you hunt for them. Pours a clear, light orange, with just a ring of big white bubbles around the edge of the glass. Wow... this is tart... Major notes beyond tartness are peaches, green apples, and lemons. Very dry, with a light body, and very low carbonation. Very long sour finish... I’m really curious what this does over time.

Original rate from Uto and update from Quaffs. Pale amber with a thin white head. Nose of hay, orange, apricot and vinegar. Similar in taste, tart and salty with grapefruit notes but also quite subtle for a Cantillon. Ticks all the boxes while being soft and well rounded. Enjoyed.

Bottled. Vintage 2001. Hazy golden with a very small, bubbly head. Like all Cantillon; diesel and rubber-aroma. Not extremely sour. Pleasant oak-notes.

Bottle, 75 cl. Clear yellow with fizzy white bubbles. Cidery fruit aroma with green apples and grapefruit, some woody notes as well. Light in body with soft but lively carbonation, very sour with a light bitter touch.
