Commercial Description:
The Lou Pepe Gueuze is a blend of three different 2-year-old lambics. The standard Cantillon Gueuze is a blend of 1,2, and 3-year-olds. The inclusion of the younger lambic (which still has some unfermented sugars in it) sparks a refermentation in the bottle that gives Gueuze its famous champagne-like spritziness. The simple idea behind the special Lou Pepe blend is that it should have much more of the taste of old lambic, which is of course much harder, drier, more sour, and more complex than the young stuff. (Though 3-year-olds are generally more complex than 2-year-olds, it's not necessarily so; the 2-year-olds used in this instance have as much character as most 3-year-olds.) This being Gueuze, it has to be spritzy, so the brewery opted for the same method used in conditioning champagne: everyday refined sugar is dissolved in water and added to cause a refermentation. The sugar ferments out completely, so there is no residual sweetness, which Jean-Pierre famously detests.

2004 Vintage, bottled Jan 10, 2006. Poured a slightly apple-juicy golden with some loose-bubbled thick white ring.. dusting across the middle. The aroma picked up heavy sour vinegar and barnyard notes with sliced apples, pears, and dusty oak.. some lemon accents come through as well. The flavor began with intense lemon and vinegar sourness on the tip of the tongue.. fresh light fruit skins form the basis for the middle, with old oak and more vinegar riding through the finish... sliced fruits and vinegar were most influential. Lively carbonation, yet the brew slid over the palate.. rather heavy sourness sticks with you for a while. Excellent stuff!

Murky golden color with a medium white head. Aroma is sour with just a hint of cherries. Medium palate with plenty of carbonation. Sour cherries in the flavor with some white grapes and some funk. More sour than I expected, but very enjoyable.

’04 on bottle; cork says it was bottled ’06. Bright golden-orange. Thinnish, short-lived head. Wonderful nose -- strong and inviting. Smooth and weighty on the tongue, with a nice amount of carbonation. Mouthwatering tartness is drenched with oak, lemon, cherries and leather. Rough yet refined. Bold and sharp yet mellow and pleasant. A healthy amount of bitterness surfaces as the tartness fades. Faint horseblanket/barnyard. Somewhat drying in the finish. Enjoyable flavors and aromas throughout. 2005 BOTTLE: Rich orange hue; fizzy head. Sharp yeast nose. Lively palate. Quenchy. Sharp apples, vinegar, salt and tart.

Spontanious weekend 07 ... slightly hazy yellow ... sweet woody sour aroma ... Sharp lemon Sour hop ... with a low tone bitter lemon linger.

Bottle 2004 @ 16th Weekend of Spontaneous Fermentation 2007, Opstal. Clear medium yellow orange color with a average frothy good lacing mostly lasting off-white head. Aroma is light fruit, vinegar, notes of wood. Flavor is light sweet and moderate acidic with a nice dry finish. Very nice balance gueze. Body is light to medium, texture is watery, carbonation is flat. ;o))

Spontanious weekend 07. There is a small small passage here where im discussing carlo’s next beer. It says:"Carlo’s next beer should have me on the front with a glass which as a liquidised kabab with lambic in it on the front." The lambic funk was clearly getting to me. Notes say: A tit blastingly good gueuze, super drinkable, this made me wonder why i should drink any other beer apart of lambic.

750ml bottle@Kristiansand lambic festival. 2002 compared with 2003 version (drunk 2007). Golden body with a huge white head. Aroma is acid, but more fruity than usually. Flavor is really fresh and extremely well balanced, this is a really smooth geuze. Its sour and dry with a tart aftertaste. Very nice and easy to pair with spicy sea food. 2002 version is more matured and harmonic than 2003.

Bottle from Capone’s. Hazy golden coppery color with 2-finger off-white head. Aroma of tart fruit, predominantly apple, pear, tangerine, chardonnay, plus a hefty dose of Bretty yeasty funk and peaty earthy notes. The flavor is tart and very fruity, with a big funky yeasty flavor coupled with the apple, pear, white grape, and citrus elements. Solid complexity.
